Jenny's Grilled Chicken Breasts
I found that this recipe made the chicken breasts a little dry and the combination of spices made it very salty. The recipe calls for the breasts to be grilled 10 to 15 minutes per side and that was way too long as the chicken ended up overcooked and dried out. I suggest cooking about 6 minutes per side so that the chicken is cooked through but is juicy. I served it with a fresh mango salsa and that made all the difference. Not sure I would make this again.

Mango Salsa Salmon
This recipe was easy and tasty but missing some zing, so I added 2 tbsp. lime juice, 1/2 diced red pepper, 1 jalapeno pepper - seeded and diced, salt and pepper to taste. It tasted wonderful over my grilled salmon. I have already made it twice, it is so fast to make. It would probably taste good over grilled chicken breasts too.

Basil Chicken over Angel Hair
This recipe was FANTASTIC! I used really ripe plum tomatoes and it is essential to use FRESH basil. I used a little more hot pepper sauce than the recipe called for and omitted the Parmesan cheese altogether. I also cut the salt in half and added some dried oregano and freshly ground black pepper. I found this recipe very simple and easy to make. Delicous - will make again and again. Thanks!
