My husband and son loved these cookies. I had no problems getting the cups out of the pan. I sprayed the pan with baking spray, made sure they were completely cooled, and used a small paring knife to tip them out. I used Fisher nut topping(found with the ice cream toppings in the grocery) instead of pecans. It is a little salty and the combination of the salty and sweet is a favorite at my house!

I agree with Michelle about this being a great base recipe. I also used Corinne's advice in her review and my two guys loved it. A definite keeper, especially for fall and winter. Next time, I am going to use this recipe as a base for pot pie, I think it will be yummy!

I made this for company and got rave reviews. Here are a couple of changes I made: Use Brown sugar instead of white in the crust. I used the pudding recipe from Banana Pudding IV, it was richer and creamier because of the cream cheese and condensed milk in it. The coconut crust makes for a nice surprise in this pudding...I will definitely make it again.
