I made this last night and served it warm to a group of friends. It was well received, and one of the ladies said she didn't care much for cinnamon- and this was the perfect amount. I'm not giving it 5 starts simply because I feel that it needs MORE cinnamon. I could barely taste it. I'm not quite sure if I'll make it again - but if I do I'll definitely increase the cinnamon. Also - don't forget to flour the pan (like I did) otherwise the cake won't come out in one piece!

Caramel Apple Coffee Cake

This was very good, well enjoyed by my coworkers. I agree that the amount of oil is too high - but that is easily solved by substituting applesauce, which is something I generally do anyway. Will very likely make again.

Zucchini Cornbread Casserole

This was very good - I forgot to put in the salt and pepper and it definitely needs it. But I will make this again. I especially enjoyed the cheese in the recipe.

Baked Potato Skins

I made this a while back and forgot to rate it - my potato skins turned out great, exactly what I was looking for. It takes a bit to get through all of the steps, but will definitely make again.

Easy Pizza Sauce III

This was a very easy sauce, and nice because I always have the ingredients on hand. I use fresh garlic - and the second time I made it I put in an Italian Seasoning mix rather than just oregano. Will definitely stay in my recipe box, great to use for a quick sauce.

Emily's Famous Marshmallows

These didn't turn out quite the way I expected - I think after reading some reviews I will add more flavoring next time. Also they were VERY difficult to cut, perhaps piping them out is the best answer. I'll likely try again but after reading more into other recipes.

Amish Breakfast Casserole

This was good, I just finished off the last of the casserole. I don't think it was spectacular as far as flavors, but it was easy to make. I forgot to buy swiss cheese so I just used an Italian cheese mix I generally have on hand. Will likely make again - in rotation with the other breakfast casseroles that I have tried.

Big Soft Ginger Cookies

Very good! Received great comments on these cookies. My only problem now will be deciding whether to make these cookies, the gingerbread biscotti recipe from this site, or the Spicy Gingerbread men. I love them all!

Fudge Truffle Cheesecake

This was good - but I don't know if I'll make it again. It's very rich, and it was difficult to tell when it was done. Overall I wasn't super impressed by the taste and consistency, it was good but not great.

Cabbage Roll Casserole

A little disappointed in this recipe - it wasn't bad, but it just didn't wow either of us. I think I like the traditional cabbage roll better, even though it is more work. I can't pinpoint what we didn't like about it.

Gingerbread Biscotti

Very good! This was my first time making biscotti and these were enjoyed. I melted white chocolate and spread it over each cookie. Will definitely make again.

Sweet Potato Casserole II

Good recipe, I ended up with a very thick layer of streusel - but my husband said to not change a thing, so this recipe is now in my box. I served it at Thanksgiving this year, and it went over very well.

Chocolate Trifle

Have made this a couple times now, it was enjoyed each time. I generally use real whipped cream instead of cool whip, and sometimes add strawberries. Endless variations on this recipe.

Cabbage Rolls II

We really liked this, although my husband asked for more seasoning next time, he thought the mixture inside the rolls was a little bland (couldn't even tell there was meat inside). I'll definitely make this again, but add more salt and likely some garlic and onion seasoning.

To Die For Blueberry Muffins

I made these for my husband - he ate 3 in a row plus half of mine, so I think these must be good and deserving of 5 stars! I don't care for blueberry muffins, even though I like blueberries. However, it was an easy recipe, and the topping was tasty. Will make again for the hubby! My only change was to use applesauce instead of oil.

I found this pretty disappointing - loved the idea but it just didn't turn out great for me, and I followed the recipe exactly. Just didn't have great flavor, IMO. Won't be making again.

Libby's® Pumpkin Roll with Cream Cheese Filling

Thought this was good - it was well received by my guests and my husband has enjoyed it as well. It was pretty easy to make. I thought pecans would be a better fit than walnuts, so I used those and I also added some spice to the cream cheese filling. Will very likely make this again!

Brown Sugar Meatloaf

I loved this recipe, I hadn't made meatloaf in a long time, but I think I'll make it more often with this recipe. The only change I made was to use bread crumbs instead of saltine crackers, which I don't usually purchase. I also made it in a mini-loaf pan. Yummy!
