Eucharistic Bread

I recently taught the cooking rotation in our Sunday school program when the kids were learning about "Give us this day our daily bread." I quickly nixed all of the suggested bread recipes because they took too long. Instead, I used this one, which the kids (and their parents) really seemed to like. To save time, I made the dough at home, then the kids finished kneading it and shaped it into biscuit-sized loaves, which baked in 10-15 minutes. My family liked the recipe so much that I will be sure to use it again at home!

Sally's Spinach Mashed Potatoes

Some reviewers complained that this recipe was too bland, but I cooked my potatoes in salted water and added the spices according to taste (did not measure), so I felt the casserole had plenty of flavor. I cooked a 10 oz. bag of fresh spinach rather than use frozen. I would make this recipe again.

Southwestern Casserole

I used ground turkey instead of beef, black beans instead of kidney beans, and cheddar instead of Jack. I also omitted the jalapenos. My family found the casserole tasty and worthy of seconds!

Homemade Refrigerator Pickles

Very easy and tasty. As suggested by other reviewers, I cut the sugar in half, and it was the perfect amount of sweetness. Also, I omitted the green pepper since that did not appeal to me.

Terrific Turkey Chili

Tasty and healthy dish. I like having a change from the traditional chili with beans. Since I did not have either beef broth or crushed tomatoes on hand, I substituted vegetable juice and water. The flavor was a little spicy for my kids, but my husband and I liked it fine as is.

Grandma's Green Bean Casserole

I cooked fresh green beans for this recipe and substituted chopped scallions for the onion since that is what I had on hand. My whole family liked the dish, but we were split 50-50 on whether we preferred this recipe or the traditional green bean casserole. The verdict: will keep and use both recipes!

Marinated Grilled Shrimp

This was the first time my husband and I attempted grilled shrimp, and they turned out fantastic! The only substitution I made was vegetable juice in place of the tomato sauce, and I marinated the shrimp overnight. They had a nice garlicky flavor! Maybe a little too salty, perhaps because of the veggie juice substitution, so I might cut back on that next time. Definitely a keeper!

Ginger Glazed Mahi Mahi

For me, the sauce came out looking very black but tasted great. The fish had just the right amount of flavor from the marinade. This was my first experience cooking mahi mahi, and I feel it was successful!

Cornbread Pancakes

My family loved them! They are much better than the cornmeal griddle cake recipe I usually use - very moist and fluffy. (Gotta love buttermilk!) I have been trying prepare higher fiber foods, and this recipe fit the bill.

Blueberry Cream Cheese Pound Cake I

I was really nervous about how this cake was going to turn out because it did take much longer to bake than directed, and the outside was really brown. However, the inside was moist and delicious! My grocery store does not carry lemon cake mixes for some reason, so I used French vanilla. I also substituted 1/2 cup melted butter and a couple tablespoons of oil as another reviewer suggested, and I tossed the blueberries in flour before adding.

Whiskey Marinade

Excellent! I marinated chicken breasts overnight, then breaded and pan-fried them and served with a gravy made from the excess marinade. Big hit with the whole family!

Chocolate Banana Bread Pudding

The only changes I made to this recipe were that I substituted almond milk and baked the pudding in a water bath without the towel. (Why the towel?) My oven bakes a little hot and I forgot to adjust the temperature, so the pudding was done in 45-50 minutes. The texture was perfect - not too runny, not too dry. Unlike other reviewers, I thought the sweetness was just right, but I guess that's a matter of personal taste. I have had a banana bread pudding before and forgot that the bananas bake up rubbery, so I will try other reviewers' suggestion of mashing them next time. I am also used to having a sauce (e.g., rum sauce, vanilla sauce) on my bread pudding and thought this needed something additional.

Chocolate Yule Log

I've never made a yule log before, but this recipe was easy enough for me to follow and have good results. The cake looked great - I decorated with marzipan mushrooms and mint leaves and cherries that resembled holly. However, the mocha flavor wasn't my favorite even though I usually like mocha. I will try a different recipe next time.

Terrific Turkey Meat Loaf

My entire family ate this dish w/o complaint, which is a good thing! I bought one of those prepackaged 3 lb. tubes of ground turkey and tripled the recipe to make two meatloaves (one for the freezer). I omitted the black olives and used Lawry's season salt in place of celery salt, and I also used oatmeal instead of oat bran. Since I eyeballed the ingredients rather than measuring them, I'm not sure how many oats I used, but I know it was a lot more than called for since the mixture seemed runny. My family thought there was something a little odd about the flavor - couldn't decide if it was the Worcestershire or the peppers - so we will probably play around with those amounts next time to make it more to our taste. I topped the meatloaf with ketchup about 10 minutes before removing it from the oven. Even so, my family still ate it with extra ketchup.

Chicken Noodle Casserole I

My family loved this recipe, but I did change it up a bit to suit our tastes and make it easier to prepare. First, I added cooked onion, peas & carrots and substituted cream of chicken soup for the mushroom soup. I also used an entire bag of egg noodles and a full sleeve of crackers, which I crushed before opening. Oh, and I just threw in a couple cups of chicken that I pulled off a rotisserie chicken rather than boiling the breasts.

Garlic Alfredo Tilapia

We have a winner! My family is not big on seafood, but they will grudgingly eat tilapia. My husband and oldest son really liked this recipe and even went back for seconds. I accidentally used the whole jar of Alfredo rather than just a cup, so I've frozen the extra to use another time. We'll see how well it freezes....

Ground Turkey Noodle Bake

This recipe was a big hit, especially with the kids. Since we like our food flavorful, I incorporated some of the other reviewers' suggestions and also more-than-doubled to make the recipe easier. I used an entire bag of egg noodles, 10 oz. cream cheese, 2 c. fresh milk (not dry + water), and about 1-1/2 jars of spaghetti sauce in lieu of the tomato sauce. I also increased the parsley and Italian seasoning, and I added some seasoned salt (a white variety) to the noodle mixture. It just fit into a 9x13 pan. Oh, and I sprinkled shredded parmesan on top of the mozzarella. I will definitely make again.
