Basic Microwave Risotto

Amazing! I have to admit I have never made risotto the "old fashioned" way, but have used several rice cooker versions. This is much more easy and is totally delicious. The only change I made was to use chicken broth in place of both veggie broth and wine. I also added mushrooms and shredded zucchini. The risotto was flavorful and creamy. Will definitely experiment with other add-ins and this is my new favorite recipe!

Wicked Good Veggie Chili

Wow! Simple and delicious chili! This was my first time using TVP but I was pleasantly surprised. The chili tasted just like "normal" chili with meat. What was even more fantastic was that DH tried the chili and really enjoyed it. He did not have a clue there was TVP or he would have hit the ceiling. I'm delighted to serve a high fiber, healthy, delicious tasting, filling entree to the family.

Country Style Fried Potatoes

These were very tasty and simple, but I would definitely cut back on the crisco as they were a little on the greasy side. Otherwise, a good basic recipe. The family ate 'em all up!

Double Chocolate Brownie Cake

I was a little skeptical since I am not a chocolate cake lover, but this cake is FANTASTIC! Very moist and chocolatey without being overly sweet. As the name implies, it reminds me of a gooey brownie. I added the glaze that another reviewer suggested and the whole family gobbled it up!

Buttons and Bows

A simple and delicious breakfast or snack! My mom used to surprise my siblings and I with buttons and bows when we were children. I always loved the buttons because the sugar to dough ratio was much higher, LOL! A great treat that I can make for my own kids now.

Delicious Ham and Potato Soup

This really is a hearty, flavorful soup! The only change I made was the substitute cream for half of the milk. I used a vidalia onion chopper to make quick work of dicing the potatoes and onions so the soup went together in a snap. Thanks for a great recipe!

Jalapeno Popper Spread

This dip was the hit of our Christmas Eve party! It was simple to put together, great hot or cold, and everyone loved it. The only changes I made were to use 4 ounces of jalepenos rather than 2, and to substitute cheddar cheese for the parmesan. I stirred half of the cheddar into the dip and sprinkled the rest on top. We will make this often... thanks for a great recipe!

Twenty-Four Hour Salad

This is a fantastic salad, very similar to the recipe my mom used to make. The only changes I made were to add a layer of small shell pasta (tossed with a little olive oil to prevent sticking), and a layer of sliced hard boiled eggs. For the dressing I used 1 cup mayo and 1/2 cup sour cream, plus 2 teaspoons dijon mustard. Fabulous flavor ... a very impressive salad!!

Pumpkin Crunch Cake

I love pumpkin, but I was not thrilled with this cake. I cut back the sugar to 1 cup but it was still overly sweet. It was easy to put together but the taste was just OK.

Pepper Jelly Appetizer

So simple and yet so delicious! I microwave red pepper jelly and pour it right over the block of cream cheese. I love it served with wheat thins -- makes a great appetizer or snack!

Chicken and Biscuit Casserole

This is really amazing! The whole family loved the casserole and gobbled it up. The only changes I made were to add cream to make up the difference between 2 cans chicken broth and 4 cups (which was about 1/2 cup cream). I also sauteed the veggies and made the sauce in an oven-safe chicken fryer pan and just added the biscuits on top to bake, rather than pouring the mixture into a separate pan. Creamy delicious chicken mixture, and perfectly cooked, lightly browned biscuits. The basil was a great "secret ingredient." Thanks for a great recipe!

Tangy Turkey and Swiss Sandwiches

Very tasty! The only changes I made was in giving every family member their choice of cheese and "grilling" the sandwiches in the oven. Placing the buttered sandwiches on a baking sheet in a 450 oven and baking for 8 minutes per side yields perfectly golden, crisp bread, melted cheese, and piping hot turkey and tomato. Great basic recipe! We'll try with other meats and cheeses soon.

Slow Cooker Lemon Garlic Chicken II

This recipe makes fantastic chicken! The first time I made it I used chicken quarters which definitely turned out more moist than another time when I used boneless skinless chicken breasts. Lots of flavor and tender, delicious chicken. I used the juices to make a simple gravy with a unique lemon flavor. Definitely a keeper! Great recipe for fall and winter.

Baked French Fries I

These are truly the best french fries ever! I always quadruple the recipe using 4 potatoes and four times the spices. I do add almost a teaspoon of salt (when quadrupling the recipe) in with the oil & spices. I also preheat the metal baking sheet in the oven so that it's piping hot once the potatoes are placed on it. The french fries always are crisp on the outside and soft on the inside. The spices give the fries a great kick and it is a favorite in our family. I also make a simple dip using equal parts mayo and sour cream, and add garlic powder, onion powder, a dash of salt and cayenne. It's great for dipping the fries. Fantastic recipe!!

Double Layer Pumpkin Cheesecake

Fabulous recipe! We normally do the traditional pumpkin pie but wanted a change this year. This double-layer pie gives you the best of both worlds -- pumpkin pie and cheesecake! Simple to put together and the two layers gives a spectacular appearance on the plate. We garnished each slice with real whipped cream rather than covering the whole pie, and drizzled with caramel ice cream topping as someone else suggested. I also added a bit more pumpkin than called for and doubled the spices. Great recipe... this will be a new Thanksgiving tradition!

Easiest Egg Nog

I was surprised -- this egg nog was wonderful and very fresh tasting! I normally make Amazingly Good Egg Nog for Christmas since it is soooo rich, but my kids wanted egg nog for Thanksgiving. Our first batch was gone in a flash and my 13 year old son said it was his favorite part of Thanksgiving! We did use part half-and-half in this batch for extra creaminess. Made a second batch later in the day with all skim milk and it still tasted wonderful. Great recipe... we'll be using it often!

Nany's Cheesy Cauliflower Casserole

Absolutely delicious! I made it just as written and the casserole was creamy, cheesy and just fantastic. It reminded me of a cheesy potato casserole that is a favorite in our home. Definitely a keeper!

Kentucky Biscuits

Oooh, these were delicious! Very light and fluffy. I even had to substitute margarine because I was low on butter, but they still turned out fantastic. The biscuits can only be better with butter. Definitely a keeper recipe!

Stuffed Meat Loaf

Absolutely delicious! The whole family raved about the meatloaf which is amazing in itself. I followed the directions exactly and served with cream of mushroom soup gravy. The meatloaf was moist and flavorful and the mushroom stuffing was a nice touch!

Roasted Sweet Potatoes & Onions

Out of this world!! The sweet potatoes and onions were carmelized and delicious and the almonds were a surprising crunch -- great combination! The sweetness of the amaretto was just right. I did cheat a little -- rather than toast the almonds I just added them to the last 20 minutes of baking. They were perfectly toasted without the extra step. Great recipe!!
