Roasted New Red Potatoes

I had purchased some baby Yukon Gold potatoes and was looking for a roasted new potato recipe when I came across this one. I used the same amounts but seasoned with kosher salt and fresh ground pepper as well as herbes du Provence. Since I was roasting a chicken at the same time, I threw them in with the chicken on the highest rack at 350 (turned down from 400) for about thirty minutes. They were marvelous; they tasted like BUTTER. (Which is perhaps due in part to my Yukon Gold fetish.) Very simple and adaptable recipe.

BTW, I forgot to mention, they aren't Georgia Green Beans as in the American South, but rather, from the country in Eastern Europe. Sorry about the confusion!

Lemon Leek Roasted Cornish Hens

This was a great basic recipe! To suit my owns tastes, I substituted fines herbes for the poultry seasoning, and added a dash of olive oil and some minced garlic. Also, rubbing the birds with the herbs enhances the flavor. And brushing the birds with butter during the roasting results in lovely golden skins. And if you're feeding any vegetarians, usig the marinade to broil portabellas results in a delicious entree my boyfriend raved over.

Eggless Sweet Potato Casserole

I used this recipe in a dorm kitchen and it turned out amazing, even in such strenuous circumstances. The streusel-like topping is only enhanced by the addition of allspice; allspice also makes an excellent addition to the casserole itself. I found that steaming the cubed sweet potatoes in my rice cooker for about 30 minutes made for an ideal mashing consistency. They smashed right up!
