Easy Chicken Enchiladas

Good recipe. Like other reviewers I halved the cream cheese and replaced the salsa with enchilada sauce. I mean they are enchiladas, why not use the right sauce. I sweated some onions and then added my cream cheese (onion and chive was all I had on hand) and half the 10oz can of enchilada sauce. Once this was all melded together I added the chicken(3 cups) and half the contents of a small can of diced green chilies, I thought about using diced jalapenos but my wife would not have approved. I then spooned this mixture into six tortillas and arranged them in a casserole dish. The remaining enchilada sauce was then poured over them along with two cups of a Mexican blend shredded cheese and some diced onions, then into the oven they went. This came out awesome, I can't wait for leftover-lunch today!

Slow Cooker Chicken Taco Soup

My family loves this one. You can customize so easily too, more or less of one thing, add jalapenos for heat, use pork instead of chicken, etc. But not matter what we do it still comes out great. Serve with chips and a dollop of sour cream and a sprinkle of cheese.

Bodacious Broccoli Salad

This recipe rocks! I love broccoli and this is such a quick and easy way to enjoy it in the summer. I do add golden raisins to it for a slight change and will use different cheeses depending on my mood. I've even thrown in diced mild chiles and the Mexican blend of cheese for Cinco de Mayo. Not very Mexican but it went quick nonetheless. It is my go-to recipe for potlucks and summer barbecues. In fact I am making it tonight! Mmmm, can't wait.
