I made this loaf into 11 muffins... we shared two with my inlaws, guess what happened to the rest before this photo was taken! Yummy! A mess to make because of the glaze but very worth it. I used pineapple juice in the glaze instead of orange, but the muffin is still orange. I also made it vegan by using egg replacer, vegan butter, and vegan white sugar.
