Napoleon's Banana Muffin

I also cut the sugars about in half.. I used brandy and malibu rum as the alcohol ingredients, and subbed some yogurt for the butter because i was nearly out of butter, and to make them a little healthier. YUM YUM! I made mine as mini muffins:) I am not even a banana bread lover, but these smelled amazing as they bake, the rum, banana and coconut essence in the malibu rum made them smell deliciously tropical!

Navy Bean Stew

This was really good. I only soaked the beans one hour, and I dont think that was long enough, because I ended up having to bake it much longer, but it came out awesome! Very hearty!

Fat-Free Vegetable Soup

I loved this recipe.. For those who dont like a really TOMATO-Y vegetable soup. I subbed zuchini for the cauliflower, left out the peppers. But used lots of black pepper. YUMMY

Becca's Taco Soup

I made this, with leftover taco meat that no one felt like facing from yesterday.. I used white beans because that was all I had, and I looked up homemade taco seasonings and added some spices from that along with more water to stretch it. It was so yummy!

Apple Pie by Grandma Ople

My two teenage daughters each followed this recipe side by side and made their own pies. It was a delicious, not too sweet, wonderful apple pie. In my opinion it could have actually been a bit sweeter.. maybe a bit more brown sugar?? But it was great! YUM!

Apple Brine for Turkey the Night Before Cooking

This was my first time doing the brine thing.. I used this recipe with the addition of a little over a cup of brown sugar, and two bottles of beer, and left the garlic out.. oh, and a tablespoon each of dried sage, thyme and rosemary. So this is less about this exact recipe and more about the whole bringing thing.. IT WAS THE BEST TURKEY I HAVE EVER MADE!! MOIST, TASTY MEAT, YUMMY GRAVY WITH THE DRIPPINGS. I used a big enamel pot I have for canning to brine in. It was delicious!

Coconut-Cornflake Cookies

I took these to a pot luck tonight, and every last one of them was gone, with five people coming up to me and saying how amazing they were and requesting them for a get togethr next week! They were a little bit sticky to my teeth but no one else complained! Very similar to a macaroon. I'm going to try to reduce the sugar next time. Delicious and different, will be a part of my holiday cookie tray from now on..

Family's Creamed Spinach

This is a great recipe! I made it with three bags of fresh spinach, and I added a bit more flour and evaporated milk to stretch it. I also added some shredded 4 cheese blend that I had in the house. It doesnt get any easier! You can't tell canned soup was made, it tastes better than my friend's traditional creameed spinach made with cream and bacon!

Vegetable Soup II

Wonderful! I substituted potato for the barley and pasta, and added chopped up carrots. For the canned mixed veggies, I added one can of green beans. I also just threw in some chopped fresh basil I had around. This is a great, basic, if tomato-y vegetable soup.

Best Ever Banana Bread

Beautiful. I substituted plain yogurt for both the buttermilk and the oil, added vanilla and pumpkin pie spice, cut the sugar down by a quarter cup. Excellent crust, yummmmmmmy!

My Chili

I made this with a few changes because I wanted to make a lot of chili yet I didn't have a lot of meat in the house. I doubled the recipe but substituted about 19 oz of mild italian sausage (out of the casing) for some of the beef. It came out excellent! I also added some cumin and less oregano for personal preferance. This got rave reviews and is a wonderful basic chili recipe you can tweak and personalize. Thanks!

Rempel Family Meatloaf

I wanted a moist, tasty meatloaf recipe that wasn't too sweet or two hamburger-y... I followed this recipe with one change, I added about a cup and a half of veggies I put through my mini food processor (celery, zucchini, onion, tomato but most veggies would work, I've been doing this for years to meatloaf) The result was amazing! Not saying anything was wrong with the original recipe, but adding veggies makes it moister and healthier. Also cooked it in a flat pan vs. a loaf pan and it was just fine! EXCELLENT!

Val's Hungarian Jewish Chopped Liver

This turned out very good. I may have over salted it a bit, but I rectified that by adding about a quarter cup of white wine. This made it really good and helped the consistency as well. Don't rate this recipe until you've tried it chilled, the flavor really comes together. Everyone I shared it with loved it! It was very easy to make.

Praline Sweet Potatoes

Absolutely wonderful, I thought my family would balk at the change from our traditional, but everyone went nuts over this! I did make some changes. I cut down the butter to half, I cut down the sugar by one third, I substituted evaporated milk for the cream and cut back by about half, and I topped the whole thing with marshmallows instead of the praline. A total hit with everyone!

This was so easy and delicious! Great low carb dinner by itself! Does not even need pasta or bread. I will definitely make it again. Note: My dad thought this was a bit too greasy, however. FYI
