Eggplant Parmesan

Love this recipe...lighter and easier than frying. It has become my go-to Saturday night meal, since my husband works late on Saturdays and he hates eggplant. I take any leftovers to my mom.

Poppy Seed Onion Bread

I love the taste of this bread, but a full tablespoon of yeast is too much! I cut it down to 2 1/4 tsp., and will try 2 tsp. next time -- it just rose too much!

Slow Cooker Beef Stew I

Five stars for easy and three for taste, so my average is 4 stars. The only thing I did differently was to add a few springs of Italian parsley. The taste was acceptable, but if I try it again, I will brown the meat before putting it in the crockpot for more depth of flavor.

This was really good and pretty easy. I didn't have a lemon, but I substituted lime, which was fine. Also, I couldn't get the water chestnuts to stay on the skewers, but that added entertainment value.

Round Steak Sauerbraten

No, it's not really sauerbraten, but it gets the texture right. Not my favorite, but a quick and hearty meal on a weekday. I served it with hash browns and brussels sprouts. I used the dried onions rather than the onion powder.

Quick And Easy Mexican Chicken

Four stars for ease of preparation. I tried this last week with jarred salsa, and was not impressed. Last night I tried it with homemade salsa, and it was much better. I served it with rice, the refried beans without refrying from this site, and sliced avocado.

Refried Beans Without the Refry

Wow! This really worked, and you truly don't have top soak the beans. My house smelled like a Mexican restaurant! This one is a keeper for those occasions when you can't be home to cook beans all day.

Blue Cheese Cole Slaw

This is really good! The blue cheese kind of melts into the dressing for a pretty subtle flavor. I halved the mustard and went light on the sugar, and we really enjoyed the results!
