Tacos in Pasta Shells

Most of the time I try to make a recipe first without changing the ingredients, but I did try this out on the family and chose to use ground chicken instead of the beef. It tasted alright but obviously it would have had better traditional beef taco flavor using the beef. I think this is also a recipe where you can really change up the ingredients to suit your own taste.

We loved this recipe! I did use fresh mushrooms and sauteed them before adding to the recipe. No other changes were made. A great recipe for potluck or family dinners.

Delicious zucchini bread! Very moist with a nice, crunchy top to it. It did keep well in the fridge as stated, but not for long since we gobbled it right up!

Cheesy Ham and Hash Brown Casserole

I have to say that this recipe was tasty and simple to make. My husband and a neighbor thought it was also quite delicious. I did cut back on the parmesan topping since 1 cup looked adequate.

Slow-Cooked German Short Ribs

This recipe came out great. I did have to make a substitution for the chili sauce. I used mostly catsup, a small amount of tomato paste and a teaspoon of horseradish sauce to equal the 1/2 cup of the chili sauce. No complaints here!

Pumpkin Bread IV

My friends and family loved this pumpkin bread! I substituted 1 1/2t. of Pumpkin Pie Spice for the 3 individual spices, and also added 1 cup chopped walnuts too. It came out moist and flavorful! Delicious plain or topped with a bit of cream cheese or butter or better yet, whipped cream! This recipe is a keeper!

Sausage Barley Soup

This recipe is fast, easy and tasty anytime of the year. It's also one that you can change up by adding various ingredients like a little tomato paste, different meats, herbs, different vegetables or pasta/rice in place of the barley. Try it and see.

I've been making this recipe for years and my tip for this recipe is to add the parmesan to the mustard/mayo mixture before you spread it on the cauliflower. Less waste!

Oatmeal Dried Fruit Cookies

These cookies came out moist and tasty. I used butter and margarine combined. I only needed to bake them for 8 minutes on convection 350' (375' standard). I used a variety of diced, dried fruit. Next time I will add nuts for crunch.

Scalloped Cabbage

I've been looking for another way to get cabbage into our dinners, and this recipe was just great. It was easy and that's always a plus for me. I used Ritz crackers in place of the saltines, since that's all I had. It's flavor was both sweet and savory. And the added bonus was the family liked it! Thanks!

Pork Tenderloin Marinade

This marinade put the "tender" in the tenderloin! It came out very moist and full of flavor too. Be sure to let the meat rest at least 5-10 minutes (covered with foil) before slicing, in order for the meat to retain all the juiciness. It's even delicious cold. Thanks for a simple and flavorful recipe!

Apple-Raisin French Toast Casserole

I served this on Easter for brunch, and had hoped it would be a top ten recipe for me, but I wasn't as pleased as some of the others were. My only complaint was that the bread was too thick. I did like the easy prep of making the night before, and putting in the oven the next morning. The flavor and moistness were perfect. I will try this recipe again with a thinner cut of the baguette.

Creamy Potato Leek Soup II

After reading other reviews, I chose to make this Potato Leek soup recipe. We loved the taste, and creaminess of it too. My family & I feel like one pound of bacon was a bit too much. I will definitely cut back on the bacon next time. I also liked the fact of not having to slave over a pot of soup all day. The quick prep and cooking time was very appealing. Like other reviews stated, I too would double the recipe to have more to go around.
