Pasta Lasagna
Excellent! I did add a can of diced tomatoes, a tablespoon of basil, and 2 cloves of crushed garlic, to extend the sauce and add some additional flavors. Wonderful and easy!!

Mexican Shepherd's Pie
Sorry but for me and my wife, this is a case of "it looks good on paper." While the corn bread was good on its own and the filling was good on its own, the sweetness of the corn bread just didn't mesh in tandem. We ate the filling with some tortilla chips but basically had to chuck the dish

Linda's Lasagna
This is a great lasagna recipe. I did modify a bit; I used 8 oz. ricotta and 4 oz. cottage cheese, to get the best of both. I blended all the cheeses (except the mozzarella) and the egg in the food processor, and it came out great. I also added a tsp. of basil and a tsp. of italian seasoning to the sauce, while cutting the salt in half. I should've made more sauce, I ended up using part of a jar of spaghetti sauce to complete the recipe. But I like my lasagna with a lot of sauce.
