I am a working-in-ministry mother to a handsome 4 year old son and a beautiful 3 year old daughter. I enjoy blessing my home and serving others through gifts, crafts, and food. I practice attachment parenting and grace-based discipline. I love musical theatre and accompany several local community and high school theaters. I love to laugh and be with friends, and love spending time with my children.

I enjoy baking for gift-giving and finding new healthy dishes that *everyone* in my family loves.
My favorite family cooking traditions
Holiday cookie bakes, letting my kids measure and mix many of our recipes at home, my mother-in-law's posole and enchiladas (still waiting for her to teach me how to make tamales : ), reminiscing with family about my grandmother's cooking, fish-fry and Christmas breakfast with my grandparents.
My cooking triumphs
Everyone loves my warm red-potato salad and my Southwestern cheesecake. I make a chocolate pecan-praline cake often for family and church functions, and love to deliver Giadda deLaurentis's Spicy Mocha to friends in the winter. All the new mom's that I deliver a meal to love my Cheesy Chicken Bake.
My cooking tragedies
I used to make the worst pancakes for my husband. I finally gave up the pre-made mixes and found my own recipes that work better. They are still not like his dad's. I exploded a wonderful artichoke casserole once by leaving it on a burner that I had forgotten to turn off. The pyrex pan sprayed all over my kitchen. I ruined some pasta fagioli once by adding too much pasta. I have made some horrible roasts and pork loin in my crockpot....not sure how I screwed those up, but I did!

Blueberry Pound Cake
I really liked this recipe! This was my first pound cake, so I wasn't sure if it was something I did wrong, but this was a little more dry than I wanted. Was the batter supposed to be pretty thick? I couldn't really "pour" it into the pan, just had to spoon it and spread it. I also added a dash of cinnamon, and made a glaze out of fresh lemon juice, confectioners sugar, and a bit of cooking oil and poured over the cooled cake. Our family likes lemon a lot! I will definitely use this recipe again. I had no trouble getting the cake out of the pan using the 2 T butter and sugar.

Caroline and Brian's Stuffed Mushrooms
This is a delicious recipe! I used baby bellas (about 10) because my grocery store did not have whole portabellos. I think next time I will try a little more flavorful sausage...I also used Italian flavored bread crumbs (progresso...99 cents!!) and it gave an interesting twist! I highly recommend this recipe. I could have just eaten the filling by itself!!

Saucy Chicken Cordon Bleu
WOW This was an excellent recipe!!! Much better than any restaurant or caterer I have ever tried...the breading was yummy, but it's the SAUCE that really makes this recipe!! I tried using a bit more oil (1/4 cup olive, 1/4 cup canola) to fry the chicken, and used a dutch oven to reduce splattering. I will make this recipe again and again for special days and birthdays!! Oh yeah...i also used 2 slices ham and a long slice of swiss...made it harder to roll, but it was worth it. Toothpicks come in very handy : )
