Quinoa with Chickpeas and Tomatoes

this has become a fav in our home. My hubby is not a super fan of Quinoa, but I love it. He will eat this version over and over!

French Apple Tart (Tarte de Pommes a la Normande)

This is wonderful! And have made it twice so far. Used Solo Almond Paste, then added vanilla, eggs and less sugar (paste is sweetened a bit). Would never know the difference. Slice the apples thinly (but not paper thin) for easier layering and presentation. Will use this recipe for a Pear Tart for a Chanukah dinner.

Simple Turkey Chili

A great simple and healthy chili recipe. Used low fat cheddar and low fat sour cream as toppings. Family didn't realize they were eating turkey instead of beef. Definitely a keeper. Thanks

Too Much Chocolate Cake

Made this for my daughter & son-in-law's pre-thanksgiving dinner. Used the 'healthy' version (sugar free pudding, light sour cream, egg beaters & applesauce instead of oil). No one knew the difference and everyone LOVED it. Great 'semi-homemade' recipe and a keeper in my house!

This rocks! You can adjust the spices if you like it less spicy or make sure your side dishes are more mellow. I don't always have fresh gingerroot, but ginger powder works just as well.

Sunday Morning Lemon Poppy Seed Pancakes

I made this for my husband & I for a Father's Day breakfast. We both loved it! The lemon tast was delightful, not overpowering and went very well with the poppy seeds. One note - I used a 1/3 cup instead of 1/4 cup measurements, but really only made enough for 2 people. I would at least double this if you're serving a family. It's a keeper!

Italian Biscotti

This was dynamite! The first time I made them, I did a double batch & sent some to my friend in AZ. She loved them & she's a big holiday baker. Didn't have anise extract, but almond extract worked fine. Substituted Egg Beaters for some of the eggs to reduce cholesterol. My husband said it's his favorite biscotti from all the ones I've made!

Roasted Cauliflower Soup

I don't know what went wrong. I listened to others comments & also added a 1/4 tsp of curry as some recommended. That small quantity overpowered the cauliflower. I prefer it it creamy where my husband likes more chunks. Will try it again as everyone said it so good. Any suggestions?

I've used all these spices before, but never with yogurt. Tried to heat the marinade with oil & water and the whole thing just separated due to the yogurt curdling.

Spaghetti Squash I

Wonderful delicious & low carb dish. For my husband & I, a single squash was enough for 2 full meals. Note: Squash should have about 1/4" water in the bottom of the pan to help with the cooking. You may need to add more about halfway through. It took about 40 minutes to bake. It's a keeper!

Old Fashioned Peach Cobbler

Was wonderful. Made it for an office picnic & people some home to their families. More of a cross between a cobbler & a pie (the lattice top), but a delicious way to use fresh summer peaches. It's a keeper!

Chewy Granola Bars

This is the first time I've given a recipe this low a rating. It was dry, raw and fell apart. It most likely needs double the butter/margarine and double the honey. It needs more cooking time for this quantity as well. It looked nowhere like the picture. And I am an awesome baker. I make my own granola to eat as cereal or with yogurt. It comes out brown and moist. Sorry folks.

I liked the idea of not frying the eggplant, but my entire family realized immediately the difference in taste. I think this is one dish that makes a difference - to fry or not the fry - that is the question?!

Biscotti Toscani

This was wonderful! made it 2 days in a row. Had to freeze some before hubby ate all of them. First day I used orange zest; next day I used lemon zest - just as good. Also threw in some anise seed I had & craisins. You can add chips directly to the mix, about 1/2 cup. Just use 1 long or 2 spatulas when removing the loaves from the oven to the racks to cool. TIP - these look even more elegant if you DIP the BOTTOM of the biscotti into melted chocolate instead of the side. I used a small rectangle container & microwaved the chips (about 2 min). Dip the bottoms into the chocolate & just use tip of spatula to even it out. Lay on their sides on a plate or cooling rack & put in fridge for about 10 mins to firm up.

Brooke's Best Bombshell Brownies

OMG! these were awesome! made 2 batches, one with walnuts for my family. Made a batch for Thanksgiving. My adult niece said that she could just live on these brownies! I cut into squares and froze in 4 square portions but my husband ate it all in one sitting. Just as good when defrosted. Just used about 1/3 cup less sugar.
