Brooke's Best Bombshell Brownies

OMG! these were awesome! made 2 batches, one with walnuts for my family. Made a batch for Thanksgiving. My adult niece said that she could just live on these brownies! I cut into squares and froze in 4 square portions but my husband ate it all in one sitting. Just as good when defrosted. Just used about 1/3 cup less sugar.

Michael's Foccacia Bread

wonderful easy foccacia! I substituted bread flour which I had in the house. Found it needed to rise more than 20 min; more like 40 min for first rise. Used less salt in the bread like others suggested, but used only 1 tsp, which was too little. Think 2 tsp instead of 1 Tbsp will work fine. Regardless, it was excellent. Am making it again today!

Easy Chicken Satay

We really loved this! used chicken cutlets instead of cutting up chicken and using skewers. Also have an indoor range top grill pan so didn't have to go out into the cold to grill. Served with basmati rice & it's great!

Blackened Tuna Steaks with Mango Salsa

Fabulous! everyone was right! I made 2 tuna steaks, so I halved the spices. Cut down a little on the cayenne (1 tsp instead of 1 1/2) and it was just enough 'blackened' for us. served 1/2 the salsa underneath & 1/2 on top. Looked beautiful. We grilled them to avoid the smell in the kitchen. Served with grilled romaine lettuce and crusty bread with olive oil dip on the side. Perfect!

Mushroom Barley Soup

Soup is great! I've made it a few times, but have tweaked it. Don't need to cook barley in a separate pot. Up the amount of Beef stock (can use vegetable stock for vegetarians) to 6 cups. You will always need to add more. Saute as stated, adding mushrooms, then barley. Simmer for about 45 min - 1 hr. Saves a pot to clean & time is the same. Also vary the types of mushrooms - I've used Shitake, Cremini & Baby Bellas combined. Comes out even more heavenly!

Strawberry Spinach Salad I

Great recipe - my husband asks for it again and again. must have made it at least 6 times in 2 weeks! One note - doesn't need as much sugar. I cut it to 1/3 cup instead of 1/2. Add dressing lightly and let others add if they need more. I only use about 1/2 of what it makes. Have also added goat cheese after tossing.

Cold Corn Salad

Great receipe, very easy to prepare! We had 3 ears of corn leftover from grilling. Sliced the kernels off of those which added extra flavor. Used lite mayo. Just add a little Salt & Pepper. My daughter even used part of this salad mixed with romaine lettuce & canned tuna the next day for a great light lunch. Will definitely make again and again

Yummy Sweet Potato Casserole

This was delicious, but just a little too sweet for my taste. I will DEFINITELY make it again, just eliminate the 1/2 cup white sugar. My family loved it! Also, it's easier to melt the 4 tbsp of butter in the microwave & add it to the mixture instead of just softened butter. No difference.

Onion Herb Bread

Great recipe! I found it also in a cookbook I have. Couple of notes: bread should be slightly kneaded, not stirred. Only needs a few minutes of kneading. Should have a second rise of at least 30 minutes. I did a round shape on a cookie sheet instead of a loaf pan. Was excellent with Butternut squash soup!

Classic Macaroni Salad

Great recipe, very easy to make. I had left over elbows from another recipe, so I halved this. Used Bermuda onion for nice color effect. Must use much less sugar! I used about 3 Tbsp (for 1/2 the amount). Could've used only 1 Tbsp. It's still a keeper!

Orzo with Parmesan and Basil

Broiled Tilapia Parmesan

I know how everyone loves this and I've made it twice, but the topping just doesn't stay on the fish. I use Basa filet or Flounder since I don't care for Tilapia. Any suggestions?

Brisket with BBQ Sauce

Oh My Lord - this is sooo good! My girlfriend first gave it to me, then I found it here. The liquid smoke just adds something. I've made it about 3 times already. Great for a holiday meal

Actually Delicious Turkey Burgers

Great recipe! Used 1/2 the amount of ground turkey & doubled the garlic. Added a little worchestershire sauce. Delicious on the grill! Definitely a family favorite.

Bourbon Pecan Chicken

Great recipe; I made it twice so far; First time I followed it exactly; Was concerned about the amount of butter. So I dipped the chicken into beaten egg whites which made the pecan/bread crumbs hold better. Baked in oven on a sprayed pan instead of frying in butter. Once you turn the cutlets, the come out just as dark as frying. Used 'I can't believe it's not butter' in the sauce but 1/2 the amount. Just as good & less fat! It's become a family favorite.

Baked Dijon Salmon

I have made this a dozen times & it comes out great every time! Even my 19 year old daughter was able to prepare it wonderfully. A MUST for everyone that loves salmon. Very classy. I've eaten this at weddings & other affairs. So glad I can make it at home!

Pesto Sauce

I think this recipe is great! I've made it a few times. With pine nuts so expensive, walnuts make a great substitute & is a barely noticeable difference.
