Ranch Chicken 'N' Rice
I gave it 4 stars because of the potential flavor. The liquid ratio is off if you use regular long grain rice. I used this as a basis for some changes: Added 1/2 chopped onion sauted with some garlic in 1tsp butter, 2 cups converted rice, 4 cups of water (my test is to mix the water/seasonings and taste before cooking, that way you can adjust as required for flavor-more ranch, salt, etc). Added pepper to taste. Place the rice on the bottom of the casserole, place chicken on the top, pour the hot liquid (with onions & garlic in it), cover and bake for 60 - 70 mins. Turned out great.

Salisbury Steak
Alterations I've made that make it a 5 star (this is for 3lbs of ground beef): One packet of onion soup mix, generous grind of pepper, some garlic powder to taste, one tbs of worch., and seasoned bread crumbs for the meat mixture. Au Jus gravy mix, thickened with flour, for the gravy. Browned the steaks, then poured the gravy over them, 350deg covered for 45 mins. Fantastic!

Taco Soup III
Good recipe. I used vegetable broth instead of water since my tap water has no flavor ;) After testing for seasonings during cooking, I added garlic and more cumin to taste. The addition of fresh cilantro made this great. Added mor liquid to make it more soup like. Used hominy and corn with kidney beans but would be good with many other variations.
