Slammin' Salmon
Wow. This is the only way my husband likes to eat salmon. It's smokey and tangy: the flavors of the sesame oil and soy sauce really tame the 'fishy' flavors of the salmon. Thanks for sharing this recipe!

Fiery Fish Tacos with Crunchy Corn Salsa
This was amazing! The first time I made this the fish was too spicy for our tastes. The second time I used Cajun seasoning on the fish instead of the rub in the recipe. It was the perfect heat. The Salsa is wonderful: Fresh and fruity tasting. Both times I made the salsa in the morning and let the flavors get acquainted. This does make a lot of the salsa. The second time I halved the ingredients and had just the right amount for us.

Buffalo Chicken Burgers with Blue Cheese Dressing
This was FANTASTIC. Even my 5 year old liked it! I've made it several times, and have had problems with the burgers falling apart a few times. If the meat seems 'wet', add an egg white and you'll be fine! Also, when I've made them recently I've used 1 Tablespoon of Old Bay seasoning instead of the salt and spices. It tastes the same (to me, anyway), and is easier.
