Panzanella Salad

This was great. I didn't use olives and forgot to buy the basil so I didn't use that either. I used 3 day old bakery hoagie rolls. This is a salad that needs to be eaten right away. I doubt that it'll be good as leftovers.

Tex'n Melt'm

This was tasty. Simple to make. I served it at a get together with friends. The only thing I would suggest is make sure you leave it in the oven until the cheese is bubbly. I took it out a little too soon and I think it would've been better if I would've left it in longer.

Roast Pork with Onion Stuffing

I am not much of a fan of pork, however, this was awesome! I followed another reviewers advice and added a little white cooking wine to the pan - good choice. I only used 1 1/2 large onions but next time will use 2 whole large ones. Served with mashed potatoes, wheat rolls and roasted green beans with grape tomatoes! I'm adding this 3 days later - While this is excellent right out of the oven it makes horrible leftovers. The pork dries out and the onions are soggy. I will make again but a much smaller pork roast so I won't have any leftovers.

Chicken Fiesta Salad

This was sooooooooo good. I ommitted the onion and added some shredded Mexican cheese blend. I topped with tortilla strips and spicy chipotle ranch salad dressing. My husband doesn't like chicken so I made his with ground beef and seasoned with a packet of taco seasoning. I ate the chicken. I bought raw chicken tenders and they cooked in a couple of minutes. This is a tad spicy but not too bad. Will make again - soon!

Garlic Mashed Red Potatoes

These are great! I used a teaspoon of jarred minced garlic instead of fresh. The only suggestion I could make is add milk slowly as I added the whole amount right away and it got a little bit soupy. The taste was great and I left the red skins on. Will make again - soon! :)

Creamy Baked Chicken

This was yummy. The sauce was so creamy. I made this almost exactly as stated. Only thing I did different was baked covered the first half hour and uncovered for the second half. I served over pasta. Hubby doesn't like chicken and said it was ok. He said the sauce is great just with the pasta. I will make again.

I made these with leftover Thanksgiving mashed potatoes. They were ok. I wouldn't go out of my way to make them but I'd make again if I had leftover potatoes.

St. Louis Toasted Ravioli

This was good. I made it for a "ladies night" I hosted last month. I used fresh small cheese ravioli. Used marinara sauce for dipping. While I did like it I probably won't make again. I will say this - my husband and I both thought it tasted even better the next day cold - right out of the fridge.

Grilled Halibut Steaks

This was good but seemed to be lacking something. It seemed bland. I softened the butter on the counter for a couple of hours. Then I mixed it in a bowl with the herbs. I rubbed the mixture on the Halibut and wrapped the fish in foil packets then grilled it for 5 minutes a side. Next time I make this I will melt the butter before I mix the herbs with it and brush it on the Halibut. I will make again with a few adjustments.

Chili Dog Casserole II

This was ok. I think I'd rather just eat a regular chili dog on a hot dog roll. At least, that's what it tasted like anyway. I didn't buy my usual brand of hot dogs as the store was out of them. That could be why my taste was a little off. My husband really liked these. I might make again.

Made this today for my husband and he loves it. I really don't like fruit pies much so I thought it was ok. I used 4 cups of fresh local sour cherries. I will make again (for the hubby).

Decadent Chocolate Chunk Cheesecake

I am a chocolate lover/dessert lover and this was way too rich for me. I baked it 50 minutes. When I cut it 6 hours later the center and most of the edges were "soupy." I recommend substituting the chocolate chunks for chocolate chips. I would still use the bakers chocolate for the glaze on top though. I doubt I'll make again.

Best Chicken Ever

This was good. I would make the following changes though. First I would use THIN skinless and boneless chicken breasts. I would also cut the butter in half as I found it a little greasy (and believe me I like butter). Also, I would turn the chicken over half way through cooking as the underside was a little soggy whereas the top was crispy. Although I did like this I probably will stick with my original chicken recipe.

Chuck's Favorite Mac and Cheese

My family makes a recipe similar to this We use all of the ingredients except we also add an 8 ounce package of shredded mozzarella, 3 ounces of cream cheese and one egg to the mixture. Very creamy and very good.
