Bierocks (German Meat Turnovers)

We LOVED these. My son does not like cabbage so I made his with beef and shredded cheddar. I took the advice of another reviewer and used a can of Pillsbury flaky biscuits. I rolled each round out with a small roller. I saved the extra filling and plan on using it for lunch tomorrow wrapped in a tortilla.

Salsa Chicken Rice Casserole

Was disappointed with this one. I mixed the soups and salsa together. I layered the rice, chicken, soup mixture and cheese. I expected this to be more flavorful. Will not make again.

Shrimp Francesca

I have made many recipes from this website and had high hopes for an outstanding meal after reading a lot of the reviews on this one. I thought this was just ok. It was bland and soggy. I even broiled it for a couple of minutes to try to crisp up the bread crumbs. I have had made many other fantastic shrimp dishes and will not make this again.

Chicken In Basil Cream

This was delicious. I used turkey tenderloin in place of the chicken, used seasoned bread crumbs, omitted the peppers, and doubled the sauce to pour over noodles as well. I also added a splash of white cooking wine to the chicken broth. I browned the turkey in the butter for about 5 minutes and baked for about 40 minutes at 350. It was good but slightly soggy. Next time, I will brown in 3 tablespoons olive oil and then bake. I also added fresh chopped garden cherry tomatoes and chopped scallion on top of the turkey after it was done cooking. Very yummy! I think this recipe would be quite good as it is written as well.

Hudson's Baked Tilapia with Dill Sauce

Wow! The sauce was amazing!!! I baked this fish according to the directions. The fish had a nice flavor with or without the sauce. However, the sauce is so delicious I wouldn't serve it without! It will also work with most fish. I will try with Salmon as well. I made this with "Orzo with Parmesan Cheese and Basil" recipe from this site as well (also amazing) and fresh roasted green beans. This is a great recipe for the summer and will be made often. I will try grilling the fish in a foil packet as well. Per another reviewer, the sauce can be used as a dip for fresh veggies which I will be using later tonight! Enjoy!

Orzo with Parmesan and Basil

Amazing! Instead of basil I followed another reviewer's suggestion and added half a bag of fresh baby spinach. Be careful as the orzo is quick to absorb the chicken broth. I gradually added a little water while simmering. after I added the cheese I added about 1/4 cup of water to melt the cheese a little. Then I added the fresh baby spinach and stirred it around for approximately 2 minutes until the spinach wilted. I served with Hudson's Baked Tilapia with Dill sauce also from this site (also amazing) and fresh roasted green beans.

Slow Cooker Teriyaki Pork Tenderloin

This was very tasty and tender. I substituted red pepper flakes for the red chile peppers and doubled the sauce. I also thickened with cornstarch before serving. Served it with coconut basmati rice and fresh roasted broccoli. My whole family loved this recipe.

Slow Cooker Chicken Stroganoff

What a wonderful easy meal. This reminded me so much of my home made chicken paprikash but creamier. Because I made this while I was at work I didn't feel comfortable leaving the crockpot with dry ingredients only so I added the cream of chicken soup in with the chicken. I also added a splash of white cooking wine per other reviews. I set the timer for 7 hours on low. I added about half to 3/4 of an 8 ounce block of cream cheese when I got home and cooked for an additional 30 minutes on high. Served over whole wheat pasta and a side of green beans amandine.

Brownie Caramel Cheesecake

WOW! Amazing! I used an 18 ounce Duncan Hines brownie mix and followed the directions on the package rather than on the recipe. I baked it for 12 minutes. The melted caramels were definitely the way to go. I melted them with the evaporated milk in a double broiler. I also used a 10 inch springform pan. I followed other reviews and used 3 - 8 oz cream cheese packs along with 3 eggs, 1 1/2 tsp vanilla, and 3/4 cups sugar. So glad I did that. I spread the remaining caramel on the top and spread the fudge topping on top of that. The brownie crust was a bit difficult to cut and I used a very sharp knife. It tasted fine though. This was a very rich dessert and well worth it!

Teriyaki Pork Tenderloin

I am not a big pork tenderloin fan, however, I thought this was very good. I marinated it overnight. I am always worried while cooking pork that it won't be cooked all the way through so I cooked it for 45 minutes. I turned it once during cooking. It was very tender and juicy. I boiled the marinade after the pork was done marinating and added a can of Campbell's pork gravy. Very good! Will make again.

Southern Pulled Pork

very moist and tender. I used 3 cups of water instead of 4 and next time I'll probably use 2 1/2 cups. I served on rolls with bourbon glaze from Tastefully Simple. I should have added onions and peppers to the sandwich for extra flavor.

Marinated Scallops Wrapped in Bacon

These were great! I marinated for 1 1/2 hours and that was just the right amount of time. I put on skewers and grilled them. Yummy! Great for an appetizer at a summer barbeque.

Barbie's Tuna Salad

Very good! We loved the blend of the spices. I did change a little per our tastes though. I used 3 cans of tuna and added 2 eggs, however, I used the amount of relish and spices that the recipe called for without tripling it which I thought was a good idea. The spices were strong with my additions so I can only imagine how overpowering they would be with just 1 can of tuna. Also, I never measure my mayo - I always just use the amount to our liking.

Grilled Brown Sugar Pork Chops

I am not a huge fan of pork chops but I thought that these were good. I grilled the chops on medium for a longer time. The sauce was tasty. While eating I kept thinking "sweet and sour." Probably will make again. Might try the sauce on chicken.

Spinach and Tortellini Salad

Fresh Strawberry Pie III

OMG!!!! Awesome! Doubled the recipe and made 2 pies. I used Keebler graham cracker crust (the crust with 2 extra servings). Used fresh strawberries from my garden. Just served to several coworkers who devoured the pies in 10 minutes. Will make again. Update: made again this week - important to let the filling cool completely. I didn't let it cool long enough (only an hour an 15 min) because I was tired and wanted to go to bed. So, the next morning when I cut the pie at work it was a bit runny. So, make sure you cool completely. Will take about 2 to 3 hours to cool to room temperature.
