Spicy Salmon with Caramelized Onions
I've made this dish twice...... once baking in the oven, and once pan frying. I prefer baking it COVERED, so that the salmon stays moist. I also used 1 medium onion, sliced, for the caramelized onions (cuz you just can't have enough of those!) My husband, who's picky, picky, PICKY asked that this recipe be put in permanent rotation, and that it tastes like restaurant food. Can't get better than that! I served with mashed white/sweet potatoes and steamed baby spinach. SO YUMMY!

Cheesy Fish Fillets with Spinach
My husband asked for a "cheesy white fish" dish.... I came here looking, and found this delicious recipe! I used frozen flounder fillets, so I made it a bit early, and let the cheese sauce help thaw them out. I had fresh baby spinach on hand, so I put two cups in the bottom of the casserole (I scaled down to 2 servings) and followed the recipe otherwise. Paired it with mashed white/sweet potatoes and sliced cucumbers. My husband could only sweep his plate with his fork, and make an "mmmmmmm" sound, because he couldn't stop eating! Thanks for a new addition to our family meal-plan!

Best Tuna Casserole
Delish! I made it gluten free by using gluten-free egg noodles (thank you amazon.com!) and gluten-free cream of mushroom soup. Because GF cream of mush is fairly thin, I only used one can. Turned out great, and totally passed muster with my family, since only have of us are GF, we are continually on the prowl for recipes that make EVERYONE happy. This is one of them :)
