Stuffed Eggplant with Shrimp and Basil

Excellent and EASY. I didn't have any basil, so I substituted tarragon and it was super. Be careful when salting the filling--the breadcrumbs add a lot of salt. I added too much and it was too salty, but that was my fault.

Pork Tenderloin with Pepper Jelly and Gorgonzola

Very good. It was spicier and sweeter than I was expecting. I cannot imagine how in the world anyone would call it oily or bland. It was neither, and I'm very sensitive to both of those things, oiliness in particular. In fact, the hot pepper jam was almost a little overpowering. However, everyone raved about it at the party I brought it to. Mine took about 20 minutes in the oven though.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This was really good. I made some changes based on what I had onhand (no cumin, no carrots--used butternut squash instead, french lentils in place of red). My advice is to not add the extra salt until you've tasted it just with the broth. Mine was far too salty. The yogurt really brings it all together.

Cream Cheese Blueberry Pie

Very good! I was out of time so I bought premade sugar cookie dough and used that as the crust. It worked very well. Because it was so sweet, I cut the sugar in the fruit sauce to 1/2 cup. Oh... and the store was out of blueberries so I did mostly strawberries and about 1/2 a cup of blueberries I already had. It was fantastic with strawberries as well. I've already given out the recipe several times and the first bite was eaten less than 2 hours ago!

Brown Sugar Meatloaf

Very, very good meatloaf. I followed the other's advice and halved the brown sugar. It was still a little too sweet for me, but I will definitely make it again and just cut down a little more on the sugar. I also put some extra onion, garlic, A1 and celery. I kept the ketchup mixture at the base of the pan but brushed it over the top about half way through. Excellent.

Banana Cake VI

Excellent. This cake was so moist. I made it a week ahead and left it in the freezer. I defrosted it the night before by letting it sit on the counter over night. Fantastic flavor but the best part was how moist it was. The only change I made was to use Keifir instead of buttermilk (it was all I had onhand).

Robin's Quinoa with Mushrooms and Spinach

This was very good the first day and not quite as good reheated as leftovers. I'll admit that the flavor of quinoa isn't my favorite, but I eat it anyway because it is so healthy. For quinoa lovers this recipe is probably a 5.

Herbed Marinated Lamb Chops

Very good marinade with items generally on hand. I didn't get to marinade it as long as the recipe called for; however, I will try it again and then re-score if it blows me away. However, I very solid recipe to stand by.
