About this Cook
I am a retired disabled OR nurse. I worked for 17 yrs at my local hospital & miss my job very much. But now I have my Princess Hayley granddaughter to fill my time. Due to my disability--MS--I am limited in what I can do, but I love to cook & share my recipes w/ all my friends. I also belong to a local Lunch Bunch group & we cook & try out all our recipes for our club. I helped start it over 30 yrs ago & we are still going strong!

Christmas cookies, Thanksgiving recipes w/ all the family around my dining room, & Christmas dinner w/ everyone.
My cooking triumphs
I won a contest for a recipe I made for the Splenda website using their new Splenda brown sugar & won a Kitchen Aid stand mixer!! Recipe---Sweet Sesame Chicken & it is still posted on the site!
My cooking tragedies
One Thanksgiving my oven broke & I had to feed 13 people. The turkey stayed frozen & I had to get a pre packaged meal at the grocery store. Not really MY DISASTER, as I had no control over the oven breaking down. But I got a brand new oven, that I loved at the time--it was 30 yrs ago.

Chicken with Asparagus and Roasted Red Peppers
This recipe is absolutely delicious!! I made it for my luncheon group & for some dinner guests & everyone wanted the recipe! This is easy to make, but tastes & looks like you slaved for hours. The flavors meld together wonderfully & an added bonus, it is very low-carb for us dieters!!!

Fresh Broccoli Salad
This is amazingly delicious!! I made it for my luncheon group & it was devoured. I had little to bring home, & my husband loved it, so I made more the next day. I use Splenda instead of sugar to keep the carbs down & added walnuts & slivered almonds. A great hit I will make again!

Crab Quiche
This quiche was superb! A great hit w/ my luncheon group & family. I reduced the heavy cream by a small amount, as it overflowed when I poured it into the deep dish pie shell. It was still as creamy & flavorful as ever. I will definitely will be making this one again!
