Spicy Apple Cake

Loved this cake (and don't omit the frosting!). I mistakenly peeled too many apples, so I actually had 4 cups of chopped fruit. I baked in the 9x9 inch pan, but the additional fruit required me to bake this almost 60 minutes before the toothpick came out clean. Next time, I'll still double the fruit, but I'll bake in a 9 x 13 pan. DELISH!

Peach Cobbler II

At first I thought the pouring of water was strange...but this Northerner has found a new favorite cobbler recipe. I thought the amount of sugar was perfect, but I did buy my peaches at the grocery store, and they may not have been naturally sweet. I did have to cook a bit longer (15-20 minutes)...judge by the browning, not by the clock. I can't wait to try this with blueberries.

Banana Banana Bread

I have never found a banana bread recipe that I've liked--UNTIL NOW! The key (I think) is the brown sugar and the absence of milk, buttermilk or sour cream. Definitely don't overmix. I also added nuts, since they're a must for me. I also baked mine at 345 degrees for 60 minutes...came out PERFECTLY! Now I can't stop eating it!

JELL-O® Easy Patriotic Pie

not my favorite Jell-O recipe. The pie looked the same when sliced, but the red layer kept slipping off the blue layer. It was just okay. Perhaps made in a 9 x 13 pan as squares would have been better. It basically tasted like Jell-O with crumbs and topping. Nothing special.

Cola Pork Chops

The flavor of the sauce is very family-friendly...however, I think if the sauce were thicker, it would be more desireable. Perhaps some cornstarch could be added prior to pouring over the chops. Great flavor.

Fish Roll-Ups

I made this for dinner last night...I only had canned shrimp, so I minced that instead of using crab. My kids hate onions, so I used onion powder instead. This was yummy! We usually eat haddock, but Dover Sole was on sale! I only gave this 4 stars because we weren't big fans of the texture of sole, but the stuffing was 5+ stars!

Whoopie Pies

5 stars on the chocolate cookie parts. My frosting/filling was less than satisfactory due to my mistake of doubling the recipe. I really didn't need to, and as a result, I rushed the cooling of the flour/paste. Make sure it is STONE COLD, or your frosting consistency/texture will be off. It still tasted great, but it looked like butter when it separates.

Slow Cooker London Broil

We are big pot roast fans...never even bought flank steak before, but I have to tell you, it was worth the price (I paid $5.69 per pound!). This cooked the full 10 hours and was just delicious...stringy but tender and moist...not at all fatty like traditional pot roasts. And the flank steak has a richer flavor than the other cuts of meat. Served it with steamed red bliss potatoes tossed in butter and fresh parsley and some sauteed escarole in garlic oil. Yummy!

Super Bowl Bread Bowls

Made these a few weeks ago...excellent flavor, though my boys are big eaters, so for a main-dish bread bowl, they're kind of small (I followed the recipe and made 6). But for a Super Bowl Party with other food, they'd be the right size. I'm making them again today and I divided the dough into four pieces so I'm going to have larger bread bowls. Also, I increased the salt to 2 tsps and I use whole egg wash instead of just the whites...I didn't like the look of the white wash when I made them the first time. Super easy and very well received by my kids...one other caveat. Those of us that put clam chowder in the bowls had no problems, but the broth-based chicken noodle eaters complained that the soup soaked through the bowl too quickly. Complain they did, but they ate every last bite!

Hot Cocoa Mix in a Jar

I think this is a very good basic recipe. I thought the pudding would make it more chocolatey...it's kind of bland...like warm chocolate milk, which would be good for kids. I had to add more cocoa powder to get a truly chocolatey chocolate.

Cream Corn Like No Other

Followed this recipe to the letter and it came out delicious! The Parmesan was subtle enough so that it added richness to the corn (beyond the heavy cream richness!) but wasn't so strong as to turn this into cheesy corn. Made it for Tgiving and it was a hit...for everyone but the lactose intolerant! :) Thanks for a great side dish that was different from corn pudding!

Roast Sticky Chicken-Rotisserie Style

Hi! For those wishing "sticky" chicken, you have to stick around and baste the bird with pan drippings late in the roasting process--something I never have time to do. If you do, however, you'll get truly sticky chicken.

Savory Turkey Gravy

So easy and it was nicely seasoned...and the best part? NO LUMPS. By mixing the flour with water ahead of time and just pouring it into the boiling stock...perfect! I did need to increase the flour a bit since we like thick gravy. I'm not going to fuss with pan drippings again!!

Four Cheese Macaroni

OMG!!!!!!! This is the best. I had to recalculate the recipe to feed 30, and I made 3 large catering pans of this stuff...it's great! I couldn't find shredded Meunster and was too lazy to grate my own, so I just replaced it with more cheddar/Jack cheese. Using the eggs is essential to the creaminess of this dish. Awesome recipe!

Cranberry Brunch Punch

Made this for a baby shower brunch and it was the perfect breakfast-time beverage. I made it ahead of time, funneled it back into the large juice containers and when I was ready to set up for the party, I put an ice ring in the punch bowl and poured the ready-made punch inside. Great recipe!

Spinach-Sausage Egg Bake

Made a double recipe for a baby shower brunch...it was a definite favorite of all the guests...who eat meat! Delicious and not as heavy as you'd think with all the Italian sausage.
