This was incredibly simple and quick to put together. The flavor was okay, but could have used some more seasoning. The cheese did run all over my silpat, so next time I'd add shredded cheese instead so it would incorporate better. Not the most amazing meal, but because of the simplicity and being a good base to add more flavors to - I'd try this one again.

This was really easy to put together. Tender chicken and base for a versatile dish. Think next time I'll follow other reviews and try adding a slice of mozarella on top for a few minutes in the oven - would be a great addition!

The hardest part of this recipe was finding poblano peppers. Ended up finding and using a pasilla pepper - worked great. I was curious to try the veg crumbles too, and was surprised at their flavor. Will definitely make this recipe again as a break from our regular protein diet. Next will serve with a dollop of sour cream on the side - would go perfect with this!
