Glazed Tofu Meatloaf

Oh Wow, really good! I made this almost exactly to the recipe, except that I only used 1 pound of turkey and a 16oz block of firm tofu. Texture reminded me a little of a meaty quiche. Flavor is awesome. I didn't use the whole package of onion soup mix because I had read other reviews about salt. Was not too salty, just right. Still fit nicely in a 9" square pan, but I would say it definitely served less than 12 (keeping in mind I used less meat). Seems like it would work well with variations, too, so I'm excited to try it with different veggies and sauces.

Tofu Chocolate Pudding

This is really delicious. I used silken tofu, a few more chocolate chips and a tablespoon of brown sugar because I wasn't sure if it would be sweet enough. It was actually more sweet than I would like, so I won't add the extra sugar and chocolate next time. Like other posters have said, the texture is very mousse-like with the silken tofu. I let it set overnight and it didn't have any tofu taste, to me. Will try again, next time with pureed bananas.

Cholay (Curried Chickpeas)

This is my go-to recipe for a quick veggie curry. I usually up the spices quite a bit, or sometimes I just use a small can of chickpeas and the same amount of spices and sauce. Really delicious and easy.

Spiced Baked Apples

Really delicious, and easy to tweak! I used mixed dried berries (cranberry, cherry, blueberry) plus raisins and walnuts. I cored the apples, cut them in half, filled with fruit and nuts, and then drizzled the butter and sugar mixture over it all. Like everyone else says, it took about 1 hour to get the apples really soft, but I was prepared after reading the comments. Everyone loved the orange zest!

Lamb Madras Curry

This is really good, even if you don't let the flavors sit for a day or two in the fridge! I had leftovers two days later and they were awesome. But it is still really good right after cooking. There were a couple of things I didn't have - ghee, cardamom pods (used powder), and curry leaves. I had never used tamarind paste before, but I thought it really added a nice balance of sweetness/tanginess to the dish. Great recipe!

Stuffed Acorn Squash Supreme

This is so easy and delicious! If you have more time, it is better to bake the squash with butter and brown sugar, add the topping and bake a little more to melt the cheese. I also like to use a spicy Italian ground sausage. To bake, put the acorn squash halves in a baking dish, open side up, with a good layer of water in the pan, cover with foil. Bake at 350 for about an hour.

Chicken Biscuit Pie

This is so much better than the traditional canned soup/bisquick recipe! I like using fresh vegetables instead of frozen, but the frozen isn't too bad either when I'm in a hurry. The only problem I always have is the biscuits don't bake all the way through and turn out really doughy, even if I bake it longer. From now on, I will do what others have suggested and bake the biscuits separately. A great, warming meal for winter!

Tofu Parmigiana

I love this recipe and I make it regularly! It is always tricky for me to keep the tofu from sticking to the pan (I only use stainless steel and don't have non-stick pans). The trick is to really press the water out of the tofu by wrapping the block in paper towels and putting a weight on it. I also have more success when I use my wok. Delicious recipe, thanks!

Rice, Asparagus and Cucumber Salad

My sister made this practically every week this summer and brought it to every family gathering. It is so good! I made it with dried dill and it is not nearly as good as the fresh (naturally). Also, I liked it heavy on the dressing, so I increased the dressing. A very good, refreshing summer salad.

Asian Coleslaw

I've made this salad many, many times and it is always a favorite wherever I take it. And it is easy to make additions or changes to the recipe. It makes A LOT, so I generally keep the dressing on the side and add it to half the salad, then if I need more salad later, I add the rest. It isn't like traditional coleslaw, where you have to let it sit for awhile. It is good freshly poured over the cabbage.

Classic Minestrone

This minestrone is so good because of all the fresh ingredients...the only thing canned is the beans. I sliced my tomatoes thin with a food processor, and it made the soup very attractive as well as tasty. Served it to about 15 friends and they all loved it!

Homemade Focaccia Bread

Butternut Squash Soup

Yum! I love butternut squash soup, and this was really good. I used less cream cheese than was called for, and I think that helped. It was rich and flavorful, with only half the cream cheese. Will definitely make again!

Banana Banana Bread

I liked the moistness and the rich banana flavor of this bread. Very good! The only thing I would change is adding nuts and maybe some cinnamon, because I like a nuttier texture in my banana bread.

Slow Cooker Split Pea Sausage Soup

I and my 30 dinner guests really enjoyed this soup. I left out the sausage and it was still very flavorful. I had to make a lot, so I cooked it over the stove in a very large pot for 2.5 hours and it turned out wonderfully!
