Hearty Ham Casserole

This was a really tasty casserole! I used a yummy ham I baked myself and I think the quality of the ham definitely added to it - it wouldn't be as good with a bland ham. It was pretty easy to make - I just baked the potatoes in the microwave while I was getting the other ingredients ready.

Chocolate Cupcakes

The batter tasted so good, but these cupcakes didn't work out in the oven. They overflowed/exploded and then caved completely in the center. I had to throw away the entire batch and clean my oven. I don't know how anyone got this recipe to work, because I specifically experimented with filling the cups to different levels. The ones filled about halfway plumped up so beautifully to a crown, but then a minute or two later exploded just like the others. Something is wrong with the chemistry of this recipe.

Easy Slow Cooker Meatballs

I love the ease of this recipe. We did think it was pretty bland though. Next time I'll spice it up with some extra italian seasoning, salt, pepper, and maybe some crushed red pepper.

Cornish Hens with Rice Dressing

This really didn't turn out for me. The hens were pretty flavorless even though I rubbed them with garlic powder and extra salt and pepper. Maybe I should have skinned them first? But I was afraid they would dry out if I did that. And my rice turned out mushy and unevenly cooked, sort of a risotto consistency but not in a good way. I did use 1 cup rice and 2 cups chicken broth, so I'm glad I didn't double the liquid. I'm glad others have like it but it wasn't for me.

Chocolate Zucchini Bread II

This was excellent! Definitely a dessert bread with all that chocolate in there. I made it in a bundt pan to better fit the "dessert" label and sprinkled powdered sugar on top. I made it as directed, except tried to make it healthier by using 1/2 whole wheat and 1/2 regular flour. Tasted fine to me. I would have used mostly applesauce instead of oil too, but I was out of applesauce. Next time I'll try it that way. There will definitely be a next time! I am always looking for "healthier" desserts to bring to my child's preschool for birthdays and this one fits the bill perfectly.

Pretty Chicken Marinade

Wow! This will be my "go to" chicken marinade. The chicken had a fantastic flavor and a nice brown color. I used regular soy sauce and while I could taste the salt, it didn't seem overly salty.

Hamburger Spanish Rice

This was very easy to make and quite tasty. I made it just as directed for this first try, then I may play with the seasonings a bit next time. The kids were afraid of the peppers, but when I picked them out they liked the flavor of the rest of it. Maybe if I chop them up super small they won't notice next time. Nothing sensational, just a quick and easy dinner with some canned fruit on the side.

Sesame Seed Green Beans

These were very tasty and SO easy. I just eyeballed all the proportions - used a little oil (1/2 vegetable and 1/2 sesame), a liberal amount of soy sauce, cooked as directed, and then sprinkled liberally with sesame seeds. They were very popular and I will make them again with asian dishes.

Asian Roll Lettuce Wrap

These were fantastic, and beautiful on the plate with all the different colors. I felt so healthy eating all the different veggies and the brown rice. I think this is a great dish for casual company. The kids ate just the meatballs with some rice and cheese.

Sausage Cheese Manicotti

This actually took me about an hour to prep and another hour to cook, so it was a very involved recipe. I am slow, but I'm not sure who could do this prep in 25 minutes. Still, I enjoyed the outcome. Probably not enough to do all this work unless I find myself with lots of time on my hands, though.

Caramel Brownies

Wow. These were amazing. My husband said they are the best brownies he has tasted ever. My batter was way too thick to "pour" also, but I spread it out as best I could in the pan. I probably would use a smaller pan next time. Took forever to peel all those little caramels, but it was worth it!

Ham Broccoli Braid

We enjoyed this recipe, and it was pretty easy and very different from anything I usually make. I made just a couple of changes: only used 1 TBL of mustard, since our ham was leftover from Easter and already had some mustard in the glaze. I thought there was plenty of mustard taste with just the one TBL. Also used colby-jack cheese instead of swiss - personal preference. And added about 1/4 to 1/3 cup of sour cream to the mixture. I chopped the broccoli up into very small pieces and didn't see any reason to cook it ahead of time, but next time I would saute the onions in a little butter to soften them - I didn't like their crunch. (I used about 3/4 cup of finely chopped onion.) Also, some of the bread didn't bake completely while the rest turned golden brown. I took it out of the oven because I didn't want it to burn. But next time I'll have to see if I can get it to cook evenly.

Southern Sweet Potato Bread with Pecans

We liked this pretty much, but the flavor didn't really overwhelm me. I guess I prefer the stronger taste of pumpkin - the sweet potato taste doesn't really come through at all. I actually added some shredded coconut to it which I thought was a nice addition.

Super fresh and healthy dish. We enjoyed it; I'm giving it 3 stars only because vegetarian isn't really my thing. But if I need a veggie dish to serve to company, this is the ticket.

Slow Cooker Chili II

A good, basic chili recipe. Smells wonderful cooking. I left out the cannellini beans and celery and substituted a can of chili beans for one can of kidney beans (just personal preference). I also sauteed the onions with the meat. Not my favorite chili, but probably one I will make again when I need a slow cooker recipe.

Authentic Louisiana Red Beans and Rice

This is a great red beans and rice recipe! I made it as directed, except used vegetable oil instead of olive oil (next time I will use less) and I accidentally used a tablespoon of cajun seasoning instead of a teaspoon! I thought it gave it just the right amount of spice, but it was too much for my kids. I will make this next time I need a red beans and rice fix.
