Big Soft Ginger Cookies
These are fantastic! They were soft (and delicious) the first day I made them and I had my doubts about how they'd hold up but they were still chewy several days later. They are quite addictive so I probably won't make them too often. I *might* try increasing the spices next time, just to add a bit of a kick. Like others, I didn't really get the crackle effect either but I don't imagine that there's any impact on the taste of the cookie so I think this is a minor issue. Thanks for such a great recipe!!
