About this Cook
I'm an old fashioned wife and mom. I've been there done that, with the career bit, and I'm doing what I love best, taking care of my home and my family. My family includes my fabulous husband, 4 adult kids away from home and teenage twins.
My favorite things to cook
I would LOVE to do desserts, they are my favorite, but then I would eat them, so I seldom cook them. I like one dish meals. We do a lot of pasta dishes, rice dishes, mexican, and my husband grills outside quite a bit.
My favorite family cooking traditions
I fix Thanksgiving dinner every year. I love it! The menu never varies. The family expects the same traditional dinner.
My cooking triumphs
I've developed a cajun recipe that is the best cajun dish I've ever had. My husband loves my stir fry dishes. I fix a very good eggplant parmagianna that is not fried. Goodness, too much to list. I like to do healthy but very tasteful cooking. We love spicy hot foods.
My cooking tragedies
I could not make gravy for years, now I do it well. I caught the oven on fire recently when I was crisping up some tortillas for chips. The early years there were some flops but it's pretty rare that something isn inedible.

Spaghetti Squash I
So this was amazing! Of course I tweaked it. I cooked the squash in the microwave. I sauteed chicken breast, salt & pepper, olive oil, fresh basil & oregano from my garden, green pepper and used halved cherry tomatoes at the end, with a handful of fresh spinach. I didn't use olives, and wish I'd have had some feta. I sprinkled with parmesan to serve. I will never have spaghetti squash another way!

Super Easy Fruit Dip
I took other's advice and doubled the yogurt, using 16oz. of vanilla yogurt. I use fat free whipped topping. Everyone raves over this ridiculously easy recipe!

Mimi's Giant Whole-Wheat Banana-Strawberry Muffins
I wanted a banana bread recipe low in fat and made with whole wheat flour and found this one. Of course, I tweaked on it a bit. I omitted the oil, strawberries and applesauce, put in 1-1/2 tsp. of cinnamon instead of 1 Tbsp., then I added 3/4 C. of vanilla yogurt. I baked in a bread pan at 350 degrees for 45 minutes. My family really loved this. Very moist!
