Grilled Fish Tacos with Chipotle-Lime Dressing

I made this with grouper and it was awesome! I was out of cumin so I just used some taco seasoning instead of it and the chili powder. I also used cayenne pepper instead of hot sauce. The sour cream dressing is absolutely amazing! This will definitely be a regular from now on.

Spicy Mango Salsa

I love, love LOVE this recipe! I use it on top of crab cakes or other seafood. I use jalepenos to make it a tad less hot and use cilantro instead of basil.

Roasted Corn Salsa

Very good salsa! I didn't have any fresh jalapenos so I used 3 whole canned peppers, finely chopped. I also added a few teaspoons of vinegar and a can of drained/rinsed black beans. Wonderful flavor!

Christmas Breakfast Sausage Casserole

I try to make this every year for Christmas. I use spicy sausage and sharp cheddar. I also do something I haven't seen anyone else do. I take shredded hashbrowns, cook them until browned, and top the entire casserole with them. My family adores it!

Heavenly Chipped Chocolate and Hazelnut Cheesecake

This cheesecake is wonderful! My friends and I always try to out do each other when it comes to cheesecake. I even got compliments from our semi-professional chef. I only put the crust on the bottom of the pan. The second time I made it, I opted to not put make the topping. I just put shaved chocolate on top. Delish!

Chicken Lo Mein
