Slow-Cooked Short Ribs
So darn good!! The sauce is enough to make you lick the plate. The ironic thing is we don't eat beef. Haven't eaten it in 20+ years and decided to broaden our menu with this dish. Only substituted apple cider vinegar the rest was as written!!

Coconut Shrimp II
I made this for my god-daughters luau themed birthday party and it was a hit!!! The only thing I changed was the prepared mustard to stone ground mustard, it gave it a little more texture. This has now become my signature dish!!! We could not make enough to satisfy the crowd.

Chicken Enchiladas II
Excellent, and so easy to make! I used corn tortillas instead of flour as they taste better to me!
