Grandma's Green Bean Casserole

This was really good, but I just couldn't use the crackers ~ I had to stick with the fried onions ~ its just not a holiday dish without it.

Baked Potato Skins

I used a lot more cheese only because we're cheesy kind of people. Here's a hint: when scooping out the guts of the potato, use a melon baller ~ its much easier to use and you have more control of it and won't rip the skin of the potato. Otherwise ~ FABULOUS!

Hearty Halibut Chowder

WOW! this was really good! I did have to simmer it for a little while longer, I prefer my chowders to be thicker. Next time I may try it with a smidge of white wine and a little more heavy cream.

Chicken Milano

This is delicious! We did as another suggested, substituted 1/2 cup broth for white wine. Using fresh basil over dried makes a difference too. Rendered the sauce down just a bit to thicken it up (I don't like cornstarch). I'm glad it made a lot, I was able to share some leftovers and have dinner again the next night.

Southern Chicken Fried Steak

I thought this turned out very yummy. One major tip - pound the crud out of the meat and get it as thin as you can. Otherwise you keep cooking it to get the meat done and burn the coating in the meantime. One reviewer said this was more like schnitzel, actually it is more like schnitzel only because you are pan frying it. If you want the traditional style chick fried steak you gotta deep fry it.

Cheese Fondue

It turned out great. Key is to flour the shredded cheese before melting it. That keeps the lumps from forming. Also, not heating it too high keeps it from burning and forming burnt lumps.

Holy smokes! I can't believe how tasty and moist this is! I said 'no butter?! no oil?!' I made it just like the recipe said, no changes, and it was so moist and flavorful. Next time I might try trading more of the white flour for the wheat and see how well that tastes.

Guacamole

This is a great recipe! Although it probably would be better if you use a real lime, I used lime juice from a bottle, and if you do use it from a bottle, only use about 1/8 cup. This tastes great, and it makes a real big bowl of it, not like the 4 servings it says.

Perfect Pressure Cooker Pot Roast

This is so good and easy! I didn't have brown gravy mix at the time so I used country gravy mix and it still turned out fantastic! I did add some of our homegrown potatoes and carrots to top it off. This has made it to my permenant recipe cards and will be a weekly fixin'.
