Chocolate Cakes with Liquid Centers

I cooked this for 7 minutes and served it immediately out of the oven. It was a bit too runny in the middle, I will definitely bake a tad longer next time. But the plus was the next day it was a fabulous "mousse" consistency and was wonderful!! Thanks for sharing.

Mushroom Orzo

Wow was this fabulous!!! I used chopped sweet onion instead of the pearl onions. Definitely something I will make on a rare occassion to spoil our dinner guests. Great creamy consistency. Thanks for sharing.

Irresistible Pecan Pie

I have very limited skill in making pie crust, but thought I would follow the entire recipe given all of the positive ratings. Instead of cutting the butter into the flour mixture manually, I put the mixture and butter into my Kitchen Aid stand mixer and used the flat beater to cut the butter in. Used it also to form the dough into a ball while adding the water. It worked like a gem! (Not to mention saving some labor.) And I heavily floured the dough on both sides as I rolled it to keep it from sticking. To keep from over-browing the pecans or crust, I placed it on a lower rack in the oven and changed by oven to the Convection Bake setting for the last 30 minutes. It came out perfect and the guests loved it! What an amazing recipe, thank you for sharing!!

Cornbread and Sausage Stuffing

I made this for Thanksgiving this year and the family ate it up. I noticed I didn't have any Sage on hand so used Coriander instead. Turned out just as yummy!

Shrimp Scampi Bake

This is fabulous!! I combine all of the ingredients in the baking dish and melt them in the oven, then simply add the shrimp and return to the oven for the baking time. I also add about a half to a whole cup of white wine. Thanks for sharing!

Gerry's Chicken Enchiladas

Absolutely fabulous! We love it!! For the chicken marinade, I use the juice from two limes, 4 cloves garlic chopped and 1/2 t kosher salt. I also used canned Ortega diced chiles in place of the 10 chiles. Flour tortillas make a nice replacement to dipping the corn tortillas in cream and saves some time as well. Thanks for sharing.

Lemon Pie I

WOW! I made this pie for Father's Day brunch and it was a huge success. When preparing the pie, I tasted the filling prior to putting it into the pie crust and was weary that it may not have enough lemon flavor. However after it chilled overnight, it had just the right amount of tartness. My mother-in-law begged for the recipe and I'm almost ashamed to give it to her as it was embarassingly easy, but FABULOUS! Thanks for sharing, I will definitely be making this one regularly.

Spinach Quiche

Absolutely to DIE for!! My husband who hates spinach went back for second and third helpings. A huge hit at Mother's Day brunch. Did have more than what the pie crust would hold, but it didn't change the flavor any. Thanks so much for sharing!!
