About this Cook
I'm a mom of one amazing little boy. I've recently gone back to work so I rely on quick & easy nutritious meals to keep my family nourished & well fed.
My favorite things to cook
I love to bake ~ anything & everything. Spaghetti, and my all time favourite comfort meal ~ meatloaf with mashed potatoes & creamed corn.
My favorite family cooking traditions
I come from a family of Sicilians & Ukrainians, who love to feed the masses. I've learned from watching my mother how to entertain & stuff the bellies of my guests with a yummy variety of dishes.
My cooking triumphs
The day I made my first pie crust. It was incredible. I feel quite proud when I can say "I make my crust from scratch" when others who I consider to be terrific cooks, can't quite do it. I actually believe "hey, I can really cook".
My cooking tragedies
Too many to list!! hehe

Fresh Pear Pie
Holy schmoly, this was out of this world delicious. I latticed the top for presentation and it turned out superb!

Lemony Caesar Salad
Scrumptious. I was pleased that no anchovies were involved in the making of this. Was a simple, light tasting salad. Will definitely make again.

Roasted Vegetable Lasagna
Superb. Was served at a Vegetarian Thanksgiving and had nothing but rave reviews. The two vegetarians at the table commented that it was the best they'd ever eaten. The meat eaters loved it too, all went back for a second helping. I followed the recipe to a tee, aside from the part where you're directed to brush the veggies (I bagged them and shook) and also added a couple extra cloves of garlic to the oil/garlic combo.
