Country Fried Squash

We really enjoyed this, although I made it with thickly sliced extra large zucchini from my garden. Added a few more spices, 1/2 tsp. each of salt, pepper, garlic powder and onion powder as someone had suggested, and also a couple good dashes of some Dizzy Pig salt free BBQ spice, and it was super tasty.

Linguine with Portobello Mushrooms

A nice, light recipe, with a nice mix of fresh herbs. I added a sliced red pepper and a large chopped tomato, and we enjoyed it very much.

Ricotta Stuffed Zucchini

Nice recipe - I stuffed a huge zucchini from my garden and could have baked it a little longer, but it was still good. I only used about 1/2 the salt and pepper suggested, and added more shredded mozzarella and fresh grated parmesan cheese on top before baking.

Curried Peas

Great simple dish, and a nice way to use the abundant harvest of fresh peas. I'm sure frozen would work as well. I used double the coconut milk, and still thought I needed a bit more liquid, so added a splash of vegetable broth. Served it over coconut rice (basmati rice cooked in coconut milk and turmeric) and it was great.

Leek Potato Mushroom Cheddar Soup

We enjoyed this soup, the only change was I didn't have portobellos so used creminis, and added a couple shakes of Dizzy Pig Dizzy Dust (my favourite BBQ seasoning) for a little added flavour, and it was great.

Fresh Tasting Black Beans With Rice

We enjoyed this dish with just a couple of changes. I cooked the rice in vegetable broth, used fresh cilantro instead of dried along with some fresh parsley, and also added 1/2 tsp. each of cumin and turmeric. I also had sauteed some chopped onion and garlic in the pan before adding the rice and beans. Served it in whole wheat wraps, with sour cream and salsa.

Potato-Topped Chili Loaf

A great recipe, similar to shepherd's pie but with a little more pizzazz. I used taco seasoning instead of chili powder, and didn't have Mexicorn, so used frozen corn and a small can of green chilis. Next time I would use chili beans instead of kidney, as someone suggested.

Cabbage Roll Casserole

Nice recipe, very easy and tasted great. As per suggestions, I did add some fresh minced garlic and a few sprinkles of my fave BBQ rub spice for extra flavour, and made a half recipe which fit nicely in a 9x13 inch pan. Also, as per Natalie I used a bottle of beer instead of broth, and it was great. Cooked for an extra 15 minutes to get the rice just right. Good one.

Fast and Easy Spinach with Shallots

Good and easy recipe. I added fresh garlic, a few mushrooms and a little yellow pepper that I had left over. Splashed with a little balsamic vinegar at the end, and it didn't last long.

Chocolate Zucchini Bread II

Very good. I followed JHUBB's suggestion of using 1 1/2 c. sugar, 1/2 c. applesauce and 1/2 c. oil, and it came out great. Was fantastic with my homemade strawberry jam.

Classic Waffles

Nice recipe, I served it topped with freshly picked raspberries and blackberries, and it was delicious. I also separated the eggs and folded in the whipped egg whites last, since I have always done that in my waffle recipes.
