This is the best little spice cake! Heating the spices with the carrots and raisins gives the cake an even texture and keeps it very moist. I followed the suggestion of grinding the walnuts, and was so pleased. The nut taste is in every crumb! Thanks for passing this one on!

I recently made a stovetop brittle which flopped in a big way. THIS recipe made perfect brittle the first time! One tip--use a really big cookie sheet and tip it side to side after pouring the mixture on it. This is easier than trying to spread it and results in a thin, crisp candy.

Delicious and easy. It's more like a rich brownie than a cake--great with vanilla ice cream. It's become my favorite chocolate dessert!
