Ginger Veggie Stir-Fry
This is great if you like vegetarian. I added tofu, mushrooms, sugar snap peas instead of green beans, extra garlic & soy sauce. Use what ever fresh veggies you have available. I didn't add salt since soy sauce has enough salt. I mixed the water, cornstarch, and soy sauce together after cooking the veggies, and then added it at the end of cooking. I served this dish over quinoa, but rice would work too.

Wilted Spinach
My husband and I really liked this dish and will make it again. I used canola oil by mistake, but it still was delicious. I'll try it with olive oil next time. I didn't use nuts, and I didn't miss them. I also recommend making 1/2 the dressing or increasing the amount of spinach to a full bag of spinach, which is what I had on hand.

Poppy Seed Bread
My husband, son and I enjoyed this poppy seed bread very much. I used plain soy milk instead of regular milk to make the recipe lactose free. I cut down the sugar to 1 1/2 cups and used twice as much poppy seed, as recommended. Instead of butter flavor I used lemon extract. I'll definitely make this recipe again.
