Vegan Pancakes
This recipient was delicious. My husband and I really couldn't tell that these were vegan. I'm lactose intolerant and my husband wants me to cook more vegan, so I'll use this recipie again. I used 3/4 cup of almond milk with 1/2 cup of water, 1/4 cup of whole wheat flour with 1 cup unbleached white flour, 1 tsp of lemon juice, 1/4 tsp of cinnamon. Next time I will try vanilla too.

Chocolate Covered Strawberries
Delicious, quick and easy to make. I didn't add any shortening and the dipping went fine without it. I microwaved the chips in a small deep bowl for 2 minutes, checking every 30 seconds to see if the chips were melting and give them a stir. I put the dipped strawberries on parchment paper to cool the chocolate before putting them in the refrigerator to harden. I made a batch with 6 oz of semi sweet choco chips and a 2 oz batch with 60% cacao choco chips, which my husband likes.

Chicken Tortilla Soup V
Very good soup and easy recipie. I added leftover turkey leg meat that my husband and son wouldn't eat. A good use of leftovers. I didn't add cheese, as I am lactose intolerant.
