Easy Broccoli Quiche

This is a good basic recipe. I used a homemade crust, added ham and used cheddar cheese as that is what I had on hand.

No Bake Deluxe Hamburger Cookies

I made many changes to this recipe...but it is fun. I used the Keebler Fudge Shoppe, Carmel filled cookies and the flavor profile is much more palatable than the mint cookies. I used coconut for the lettuce, red and yellow icing tubes for the ketchup and mustard. They were a huge hit at the last BBQ.

Best Big, Fat, Chewy Chocolate Chip Cookie

These are good. I think they had a little too many chocolate chips in them and I am a huge chocoholic so for me to say that is very surprising. Make sure to whip the butter and sugar until it is light and fluffy so your cookies don't deflate.

Black Bean And Corn Salad II

This salad was great. I used in season fresh corn I shucked from the cob and it made this salad excellent. Highly reccomend!

Irish Spicy Cornbread

I thought this was a good recipe, however, too much cayenne. I enjoy spicy food, but I think the cayenne over took the recipe. I will try again and reduce the cayenne to 1/2 tsp.

Blueberry Crumb Muffins

I thought this was an excellent recipe. As you can see from my photo, there are a lot of blueberries in this one. I would reduce the blueberries to 1 cup next time. The crumb topping is what makes this one a winner.

Chewy Chocolate Chip Oatmeal Cookies

These were so goood. I added an additional 1/4 cup of flour and doubled the baking soda as previous reviewers had suggested. I also refridgerated the dough for around an hour prior to baking. The result 48 cookies gone in two days!! My whole family loved them. I think I may try these with craisins instead of chocolate chips sometime.

Busy Day Chicken

Can't get any easier than this. I now do this with pork tenderloin too. I add an onion and occassionally a green pepper. Shred up the chicken and use it on sandwiches.

Zucchini Patties

These were really great. I have so much zuccini in the garden I am always looking for new recipes. I did add 2 Tbsp. of garlic to this recipe and baked them at 425 degrees for about 30 minutes instead of frying them. Delicious!!

Six Can Chicken Tortilla Soup

This was very tasty and very easy. I used fresh boneless chicken breast instead of canned and just sauted it with 1T of olive oil and a little garlic. Other than that, I stuck to the recipe and it was delicious! Family loved it.

Mushroom Sauce Baked Pork Chops

This was pretty good. Next time I would par-boil & season the potatoes prior to placing them in the casserole. I would also use a 13X9 Glass casserole (I used a 2 Qt casserole) so the potatoes might cook and brown better. I had to cook for 1.5 hours for the potatoes to be cooked thoroughly. The flavor was really good, I also used crushed garlic rather than garlic salt. Delicious and family ate it all up.

Devil's Food Peanut Butter Chip Cookies

These are great! I make them a lot...for a quick and easy cookie. I've varied the recipe using different kinds of chips...we like butterscotch a lot..and chocolate chocolate is my sister's favorite. One word of caution...you cannot tell when these devil's are cooked due to their dark colour and I have burned a batch on more than one occasion. 10 minutes is all you need for these!
