Maple Banana Bread

A great idea and it sounds delicious but...the maple flavor is very delicate and the bread is a bit bland. Couldn't really taste the maple or the bananas. What we could taste was baking soda! The recipe needs a make-over.

Broccoli and Artichoke Bake

My husband and I really enjoyed this. Preparation was quick and easy. I used a jar of roasted red bell peppers on top instead of the sliced tomatoes.

Chicken Tortilla Soup I

Another recipe to add to my keeper file. This is good, thick soup the way I like it. I used a can of chicken broth and didn't add any water. I do think that cumin would be a good addition.

Very, very good!! I use vegetable broth instead of chicken broth and substituted V-8 juice for half of the tomato sauce. It's a thick soup but it is delicious.

Yummy Cube Steaks

Annie's Fruit Salsa and Cinnamon Chips

An excellent recipe that I will be making again. A bit on the tart side, but the perfect match for the cinnamon chips. Oh-the chips-I wasn't sure about them at first but they were incredible simple to make and the taste was fabulous.

Ginger Glazed Mahi Mahi

I'm not a big fan of any fish that isn't fried catfish, but the doctor told hubby he needed to eat more fish so I'm branching out my fish recipes. I was surprised that I enjoyed this. It was quite good and I'll make it again. The mahi mahi was a bit pricey (but worth it). I used powdered ginger since I had some already. I served this with mixed broccoli, cauliflower, and carrots. There was a bit of glaze left over so I stirred it into the veggies. YUM!!

Angel Hair Pasta Chicken

Hubby and I agree - this is a keeper!! Due to other reviews, I used about a cup of broth and I thickened the sauce with a bit of cornstarch. I also sprinkled the cheese over the top of the completed dish rather than stir it in. Not only did this taste good, it also made a very nice and colorful presentation when served from a platter.
