Roasted Pumpkin Seeds
Rather than boil in salt water per suggestions, I only changed up a bit by putting the seeds in a skillet with butter, ovoo, and sea salt. Stirred enough to heat through, then baked. Perfectly delicious!

Spaghetti Squash I
As all of my veggies were straight from the garden, this was a great way to enjoy the abundance of the season! I didn't have any olives or feta, but did have some extra green peppers. I also added sea salt, red pepper flakes, and some Braggs seasoning (not liquid aminos, but the dry type) and some nutritional yeast (has a cheesy flavor). It turned out amazing!

Home-Fried Potatoes
Love these! I use a cast iron skillet - seems to crisp things up better than others. No onion or peppers; no boil; I usually use Yukons b/c we love them sooo much! I peel and throw all of the seasoning in the bowl with the peeled potatoes, them throw them in the skillet. Because I don't like to boil them first, the fry time takes a bit longer than this recipes call for, but awesome nonetheless! BTW... I use a great Mediteranean sea salt seasong from McCormick! Makes these even more wonderfull!!
