Maria's Stuffed Chicken Breasts

I accidently took out chicken strips instead of chicken breasts, so I layered the chicken on the bottom, spread out the ricotta/spinach mixture then topped with sauce and cheese. It baked for about 30 minutes and was done. It definitely was bland, even with the extra garlic and italian seasonings I added. If I do it again, I would increase the garlic even more, add some onion, pepper and more Italian seasonings.

Buttermilk Pecan Chicken

These just didn't work for us. The pecans mixed with sesame and buttermilk sounded good in theory, but didn't mesh. We went out instead.

Sweet Garlic Tomato Beef Pasta

I made a few changes--very minimal and it was awesome! I only had 12 oz of ground beef so I mentally scaled the recipe (using 1 can of stewed tomatoes, 2 bullion cubes, etc). I used macaroni noodles (what I had), threw in a can of kidney beans and some mushrooms that were in the fridge. I sprinkled a little bit of cheese on top of each bowl just before serving. ALL of us loved it--even my picky eaters, and I have lunch for tomorrow. Thanks so much for a wonderful recipe!

Nanna's Banana Bread

perfect just the way it is. I scaled the sugar back to 3/4 cup and had a 3rd banana so I added it. Dense, chewy and perfect! Next time I will increase the cinnamon for a more cinnamon-y wow!

Chicken with Mushroom Sauce

I filleted my 3 boneless skinless chicken breasts for quicker cooking. I doubled my sauce, using 1 cup of chicken stock and 1 cup of wine. I sauteed my chicken in the butter instead of the mushies and onions, but just added more butter to compensate. I also added a heavy tbsp of garlic to the mushrooms. Everyone loved this dish--even the mushroom hating kids!

Microwave Caramel Popcorn

1/2 cup unpopped kernels equals 4 quarts of popcorn in my air popper. I used dark corn syrup--what I had and I forgot to add the baking soda. My corn wasn't as crunchy--more chewy of a texture due to the baking soda omission, otherwise it was perfect!

Oven-Roasted Potatoes

I cut mine a little smaller so they would cook with my filleted boneless/skinless breast pieces. I liberally covered them with garlic/onion powder salt and pepper, and tossed them in some veggie oil. They stuck a little bit, but weren't too hard to get off--and they had the crunchy roasted feeling/taste all over, which is what I was aiming for.

Easy Barbeque Chicken and Red Potatoes

I did my chicken and potatoes separate...barbeque sauce covered chicken just didn't sound good to me. I cut my potatoes a little smaller so they were overdone when the chicken was done...the kids ate them anyway.

Slow Cooker Beef Stew III

Omitted the onion soup mix and seasoned with garlic powder, onion powder, salt and pepper. Added a really big scoop of minced garlic. Didn't have the mushrooms so I omitted them. Used the water, plus some bullion AND some red wine for depth. Started it at 7am and was fall apart tender at 5:45. Perfect with homemade wheat bread. Thanks!

Krissy's Easy Chocolate Triple Layer Pie

5 stars for appearance, 4 stars for taste. The pudding had little grandules remaining in in it no matter how much I mixed it. Tasted light and chocolaty though. The kids loved it with a crushed heath bar on top.

Julia's Easy Slow Cooker Chicken

I used 3 FROZEN boneless skinless chicken breasts, stated amount of potatoes, 1/2 package of onion soup mix, 1 can of water and milk mixed together and a heaping TSP of cornstarch. I didn't have cream of mushroom soup so I used cream of chicken. I put it on low for 10 hours (long work day). My 3yo loved the chicken--my 8yo and I loved the potatoes. Nice for a comfort food cold winter night! Thanks!

Herb Biscuits

These were good and went fast, but personally I would have liked something a little crunchier. I scaled the butter back to 4 tbsp and substituted the dill/parsley for a healthy shake of Italian seasoning blend. I also added some garlic powder and minced garlic, with a dash of parmasean cheese over all. I baked mine according to package directions and used 2 cans of biscuit dough in 2 cake pans (doubling the entire butter/herb mixture)...and still had nothing left.

Tomato Cucumber Salad

I used 2 roma tomatoes and 1 large cucumber (peeled). I removed the seeds from the cucumber and tomatoes, then sprinkled with salt to remove the excess moisture. I eyeballed the lemon juice and added a splash of garlic infused olive oil, a dash of dried italian seasoning and pepper as stated. I used 1/2 of a green onion (I prefer a lighter onion flavor). I let it sit overnight and ended up eating the ENTIRE thing for breakfast because I couldn't get enough of it. This will be made often--OUTSTANDING!

BBQ Chicken Pizza I

I spread my premade pizza dough over a cookie sheet. I substituted the honey and molasses for agave nectar (what I had). In mixing the chicken with the bbq sauce it was hard to spread evenly. Next time I will do the chicken separate from the sauce for that size. My crust didn't crisp in the middle but it was all good. I used 2 cups of mozzy cheese and omitted the cilantro. My BBQ chicken pizza hating husband LOVED it, as did everyone else. Thanks!

Marshmallow Treats

I doubled the recipe and increased the rice cereal by about 1.5 cups. I put half in a 9x13 pan lined with buttered waxed paper, put about 1.5 cups of mini chocolate chips and mashed down, then covered with the other half of the cereal mixture. I covered with wax paper and let it set overnight. Liftout was a breeze, the squares stayed together, and everyone loved the chocolately surprise in the center.

Mizithra Browned Butter Pasta

simplicity at its best! I melted the butter, clarified it, and then browned it. I couldn't find mizithra anywhere so I used Dubliner instead and it was just as tasty! Next time I will add some fresh garlic to the cooling butter for more pizzaz. I took some broccoli spears and added the butter solids, fresh garlic, pepper, wine and better than bullion over medium heat. The broccoli was an excellent side dish and none of the butter went to waste. Even the pickiest eaters ate both dishes!!!

Absolutely Best Brownies

These were nice! A little too cakey for me, but the taste was nice. Next time I'll increase the cocoa powder for a little extra chocolate wow. I missed the distinctive brownie crakle top though.

Southern Shortcake

I made as directed and the dough was impossible to roll--you would need at least 1 more cup. I added 4 tbsp of sugar to my batter and made drop biscuits instead of rolling (I like rough edges). Would have liked more sauce for the biscuit to soak up, but there were no complaints, only requests for seconds. I would double the berries next time as well.

Baked Potato

rubbed my potatoes with vegetble oil and spinkled with sea salt before baking. My potatoes were large so it took about 1.25 hours. Perfect with a little salsa and sour cream!

Zippy Broccoli

I omitted the water/hot sauce and used chicken stock instead. Omitted the oils, and used a few tbsp of margarine. Mixed the garlic and salt into the margarine, adding pepper and onion powder as well. Placed in gallon size ziploc bag on high for 7 minutes, shuffled bag, and put in for another 3.
