Chinese Chicken Soup

Pretty good. I followed other's suggestion and only put in a smidge of chili paste (actually, I only had curry on hand, but same dif in terms of spicy factor). I didn't have turmeric, either. Only used two tsps (rather than tablespoons) of sesame oil and it was fine. Lots of chopping and pulling stuff out of cupboards but if you're in the mood for "take out" Chinese or noodles, this is a keeper.

Cranberry Chicken I

Made it in the crockpot with my own version of french dressing (and less than stated). Yes, the sauce is soupy but you could always reduce in a pan on the stovetop if you want it thicker. I think adding the full amt of dressing would compromise the cranberry taste, so go light if you want it to come through. Otherwise, pretty good!

Gourmet Mushroom Risotto

This was my first attempt at risotto and I'll definitely make it again! I used vegetable stock, which I think didn't add to the flavor as much as I had hoped. The key next time will be to find a super-flavorful veg stock. I didn't use oil to saute mushrooms (unnecessary extra calories) and used light butter at the end. I used slightly less than a pound of button/crimini mushroom mix and it was exactly the right amount. No fresh chives at the end so I threw in some dried from the spice rack and it was fine. SO good!!!

Sweet and Sour Sesame Seed Salad Dressing

I'm giving this 5 stars because I made it with sesame oil instead of canola. I used a fraction of the sugar and only had dried onion flakes so used 1/2 of what recipe called for with fresh. I used it on bagged broccoli slaw mix and diced green apple. So quick, easy, and delish!

Unbelievable Chicken

Only good thing about this recipe is how moist the chicken is. Otherwise, there's nothing spectacular about it. I'm removing from my recipe box and will look for something that has significantly more flavor.

Chicken and Mushroom Saute

Make sure you prep everything (including step 2) before you begin because once you start cooking it goes pretty fast. Next time I'll use fresh mushrooms and add more seasoning. Pretty bland but a very good start.

Peanut Butter Noodles

Maybe I ended up cooking this too long, but it's a little too 'peanutbutter-y' and actually did not taste as restaurant quality as a lot of posters have noted. I did double the recipe and used 8 oz of whole wheat thin spaghetti noodles because that's what I had on hand. Added diced leftover chicken breast but think this would be better just being a noodle dish. Next time I think I'll double the recipe but only put in enough peanutbutter for one recipe and see how that fares.

Real Welsh Rarebit

Followed this to the letter. I needed something "cheesey" to pour over a bunch of left over baked potatoes. I peeled and cubed the potatoes, put them in a casserole dish, and poured this over the top. I added a handful of grated parmesan cheese to the top. Threw it in the oven at 350 for about 25 minutes and had a great side dish. It's very thick so I get how people would want to use it as a dipping or fondue-type sauce. Tasty, though, and the first time I've had welsh rarebit.

Curried Coconut Chicken

This is pretty good. I now agree with other reviewers that the entire can of tomato sauce is too much. Also, the recipe doesn't say to drain the can of tomatoes (but I did). It still comes out pretty "soupy" and I imagine the photo that is posted was of the chicken taken from the pot with a slotted spoon. I added a few squirts from the tube of tomatoe paste in the fridge to try to thicken it up a bit. The flavor is pretty one-note and needs something else. Next time I will experiment with ginger or lemon pepper or something. I only put one T of curry and 2T of sugar and still the curry was too prominent (thus the one-note flavor). With that said, I'll try again with more broad flavor options.

Banana Bread VIII

This is pretty good. I was looking for a low-calorie version so instead of shortening I used applesauce. I added a teaspoon of baking powder (not sure why that's not included in this recipe because it kind of needs it to rise a little). I had tiny bananas so used four. When I "creamed" the applesauce and sugar together I used an electric beater on high for over a minute to get some additional air into the batter. I only used 2/3 cup of sugar. So, this turned out good--not great, but good. Next time I'll use less bananas and one more teaspoon of baking powder because it comes out a little dense. Overall, a good effort -- got the calorie count down to 104 calories for 1/16th slice.

Beer and Brown Sugar Steak Marinade

Like another reviewer, I liked this but made substitutions and improvements. I used minced garlic, an entire bottle of O'Dooles I had left over from a friend who doesn't drink, soy sauce, and then too much (my fault because I wanted to get rid of it) Splenda brown sugar blend. Used a ziplock bag for about 8 hours marinating some really cheap cuts of meat. BF raved. I thought it was slightly too sweet (again my fault) but it made me want to add some grainy mustard next time. Definitely a keeper recipe, though.

Strawberry and Feta Salad II

Like others, I substituted fresh apple for dried, cashews for the pine nuts, and omitted the dried cranberries. This is one of those recipes that you can add your favoties in terms of cheese, nuts, and fruit and it'll probably turn out every time. Delish!

Actually Delicious Turkey Burgers

Yes, they're actually delicious. Even the BF, who likes greasy unhealthy stuff, asked if I would make them again. I'm knocking it a star because they really stick to the pan so get the cooking spray ready! I used dried onion and dried parsley because I didn't have fresh. I also halved the receipt for the two of us, made 8 smaller burgers and had sliders. Delish and lower in calories!

Broccoli and Ramen Noodle Salad

A big hit at the graduation party! I made the dressing the day before. Next time I will cut down on the noodles and also give them a chance to marinade in the dressing or make sure I separate and crunch them up to avoid 'clumps' of noodles. Even though I love peanuts and sunflower seeds, they really put the calorie count over the top so I will cut down on them as well. I don't think I used all the dressing either so I was glad I made it separately. Maybe I'll try some splenda to cut down the sugar calories. Otherwise, fabulous for people who love broccoli but who are not crazy about mayo-based salads.

Sweet Dijon Salad Dressing

I have been searching high and low for the perfect "sweet mustard" dressing recipe. I'm tired of buying entire bottles, getting them home, and discovering I don't care for them. Gave this a try by cutting it in half (since I was making a salad for just the boyfriend and myself) and using only one Tablespoon of oil to cut down on calories. AWESOME!

Quinoa Tabbouleh

As written, this is three stars but has the potential to be five. I followed another reviewer's advice and let the quinoa soak overnight, rinsing it a few times before cooking so it was nice and fluffy when I was ready for it. I didn't have broth, so stuck with the instructions and cooked in water (oops, forgot to put salt in water). Used 1/2 the oil and didn't have tomato so added two ounces of crumbled feta and minced garlic. I only used 1/2 bunch of green onion and eyeballed a cup of parsely. Definitely needs something so I added a tbspn vinegar (next time I'll use balsamic for a kick) and pinch of sugar since I had to use the concentrated-type lemon juice and that can be bitter. I made the dressing separately so I could taste it (put the garlic in the dressing). This makes way more than four servings (I ended up with six cups w/o all the tomatoes!). My version brings the calorie count down to 175 per cup.

Slow Cooker Sweet and Tangy Chicken

WOW! I used a left-over gallon size zip lock bag of Thanksgiving turkey from the freezer instead of chicken, pineapple chunks (next time I'll use crushed), half a medium onion, and one bottle of Sweet Baby Ray's bbq sauce. No garlic or peppers on hand. This recipe would work well with pork (for pulled pork sandwiches) or beef. Sounds weird, but you have to try it. It's stupid easy!
