Mediterranean Chicken with Eggplant
This recipe is really good. My husband asks for it often which is no problem b/c it's easy to make. I used diced tomatoes instead of sauce and added shredded Parmesan cheese at the end of baking and serve w/ rice and bread it's so great.

Eileen's Meatloaf
I decided to make this recipe based on ingredients and rating and I am so glad I did. I HATE meatloaf so I never eat it. My family enjoyed this so much and my persistent husband kept saying you gotta try this so reluctantly I did. Not only did I eat my own serving I had seconds! It was so good! I have other meatloaf recipes from this site but because the whole family agrees on this one, this is THE ONE! As my 7 yr old put it "this is some good stuff!" Thank You Eileen

Cottage Cheese Chicken Enchiladas
I know it's cliche' to say I was worried about the cottae cheese in this recipe, but boy was I wrong! My husband unlike myself grew up around authentic mexican food and he said these are the best he's ever had. I know the corn tortillas are difficult to work with, but for the taste you gotta try it. Thank you Crystal, this is my new one and only Enchilada recipe. Oh, make your red sauce from scratch, there are plenty on this site to try!
