Black Bean Vegetable Soup
I didn't have any stewed tomatoes so I used a smaller can of Rotel tomatoes with chilies and a little tomato paste that was left over from another recipe. Gave it just the right kick! Next time I will use an additional can of black beans, pureed, just because I like a thicker soup. Also, the corn gave it almost a sweet taste that complemented the other flavors very well!

Bella's Rosemary Red Potatoes
These were wonderful! Hubby preferred the rosemary to be VERY finely chopped and I baked them for an additional 10 minutes uncovered.
