I am a full time IT employee for a large data storage company who loves to cook for her family and entertain guests - especially when it involves wine! I have recently encountered a few medical problems that required a change in the foods I eat and so I am now trying a do-over on many of my favorite recipes.
My favorite things to cook
Anything Italian! Pasta, gravy, meatballs, manicotti, lasagne... I also love cooking mexican, cajun and indian foods. Spicy is good....! :) I love to bake as well and would do it every day if it were healthy. Sigh..........
My favorite family cooking traditions
Holiday baking is a big one. Not sure how we will manage that this year with the sugar free thing going on! We also have a lot of fun at Thanksgiving. My son's birthday is very close to Thanksgiving each year so after Thanksgiving we make a big pot of Jambalaya with the leftovers. Everyone looks forward to this tradition!

Sausage Spinach Alfredo Lasagna
Fantastic! I used homemade alfredo sauce and added some sun dried tomotoes. Also used fresh spinach rather than frozen and just threw it into the sauce. This was awesome!! Add more garlic! :)

Chicken Pot Pie IX
Love this pie! To make it lower in carbs I use only a top puff pastry shell on an 11x7 oblong pan. Same satisfying pie with fewer carbs. Also, sub 1T Corn Starch and 1T flour for the 1/3 cup flour. Enjoy!

Raspberry Linzer Cookies
I made these cookies for favors for my wedding. They were a bit of work but they were well worth it!! I made the pastry portions first over a couple of days and froze them. I then put the jam inside and froze them as a sandwich. The end result was a cookie that tasted fresh baked but was not gooey because the jam had set nicely into the cookie. Excellent results!!
