Mexican-Style Pork Chops
this was really good. i didn't use instant rice, i just started rice on the stove and when i came to the part of the recipe that said boil everything and then put in the oven, i added the rice i was cooking. i omitted the water in the recipe as well. added garlic and cayenne pepper. YUMMY

Potato and Broccoli Casserole
I didn't read the reviews first. I should have. It cooked for over an hour and was still just not quite done. I personally didn't care for it. Too starchy, but the family came back for thirds.

Easter Leftovers Frittata
Loved this!!! I added more onions than called for and didn't have any bell peppers, but it didn't seem to make a difference. My friend said it tasted like a ham and cheese omelet with pasta in the middle...YUMMY! Kids loved it too!
