Portuguese Pork with Red Peppers
This recipe tasted much better than I expected, even after I read all the 5 star reviews. I did some of the suggestions others did such as using diff colored peppers, adding the chicken stock, splash of balsamic and corn starch to thicken. I marinated my pork overnight. This was so delish - I served it over buttered egg noodles. I will definitely make this again and may use more stock since the sauce is so yummy.

Ultimate Twice Baked Potatoes
The only reason I gave this recipe high marks is because I had to "fix" it and then it was great. Unfortunately, the "large" potatoes I cooked for 1 hr at 350 degrees were way underdone. I guess it was my fault for not checking their doneness before I cut them in half. 1 hr at 400 or 425 degrees was needed. The author must have used much smaller potatoes than mine. Other recipes for twice baked potatoes call for either 1 or 1-1/2 hr at the higher temperature.
