Spring Risotto

I made this recipe a few weeks ago, and my boyfriend hated it. I tolerated it, but didn't enjoy it. There was entirely too much lemon flavor; I would suggest using only the lemon zest and NONE of the lemon juice. Also, when I think of risotto, I think of a creamy texture. This recipe was more like a pilaf.

German Potato Cheese Soup

I was looking for a potato cheese soup recipe that I could use here where I live-- in Germany-- because cheddar cheese is almost nonexistant here. I live in middle Bavaria and none of the shops around here have it, not even the cheese shops. So how authentic is a German potato cheese soup that uses cheddar?
