Holiday Cranberry Sauce

Fantasitc! Definitely making this for thanksgiving. I used 1 cup water, and then substituted 1/2 c. orange juice for the remaining 1/2 c. water. I also brought the cranberries to boil and then reduced heat to medium-low, squishing the berries against the side of the pan.

Farmer's Market Vegetarian Quesadillas

These were yummy! I added some spinach to the sauteeing veggies 1 minute before I pulled them off. I also thinly sliced (1/4") the vegetables rather than chopping into chunks, which gave teh quesadilla a smoother surface. Might add some spices (chipotle powder, salt, pepper, etc) next time for a bit more heat. Really good recipe and a definite keeper!

Roasted Vegetable Lasagna

Not bad! I took people's suggestions and added a bit more sauce (approximately 1.5 jars) and will add a full 2 next time. I also added 1/2 a red onion, but will include the entire onion next time. Love the roasted flavor

Meatiest Vegetarian Chili from your Slow Cooker

Not bad but seems like it's missing something. I substituted veggie ground beef for the tofu and used raw veggies instead of sauteing them (just easier to throw it all in the crock before heading off to work). It had a great flavor but seemed too mushy throughout. Need a chewier or crunchy texture to go with it. Might try this again after trying a few others first.

Tiramisu Layer Cake

Fantastic! Doubled the coffee powder and liquor for every instance. Also followed other's suggestions with making two layers (top and bottom) with the coffee powder and leaving 1 (middle) without. Amazingly good!

Bananas Foster II

Great flavor! I reduced the recipe to 2 for my husband and I and used 1 banana. There was a little too much goop for us (too sweet), but we'll be making this again with less sugar on top of our ice cream.

Raspberry Balsamic Dressing

Didn't have raspberry jam so I used low sugar strawberry jam. Didn't have enough sweet taste so I added 2 teaspoons of honey, which seemed to do it for me.

Southwestern Pasta Salad

Wasn't that impressed with this dish. To be fair, I was looking for a light, summery pasta dish with some flavor. Flavor this had though :) I even kicked it up a bunch with some chipotle seasoning. Used seashell pasta and a can of drained diced tomatoes instead of fresh tomato. It's a good side for a mexican dish if you want a change to rice.

Chicken Satay with Homemade Peanut Sauce

This was very very good. I didn't have chili's so I used crushed red pepper. I'll need to add in more next time as it didn't have as much spice as I would have liked. The sauce was slightly running at first so I up'ed the temperature and constantly whisked until it was thick.

Jambalaya II

Tasty dish. I didn't have any green peppers so I used red and yellow...this added a sweeter flavor than I was going for so I will try the green next time. I added a handful of shrimp at the end. The dish could use a bit more salt, depending on your taste. Will definitely make this again!

Amazing! Used a large can of diced tomatoes and their juice as part of the 48 oz. tomato juice. Added carrots, 1 clove garlic and some red pepper flakes to give it more kick (needed it). Turned out great!!

Big Soft Ginger Cookies

Very yummy cookies. First batch cooked for 8 minutes and they were gooey in the middle. 10 minutes did the trick :)
