My favorite things to cook
I love to make explosively-full omelets (especially at "brinner" or breakfast-for-dinner), anything in my slow-cooker, and Mexican-inspired casseroles.
My favorite family cooking traditions
My favorite family meals growing up were chicken & dumplings, blinis with applesauce, and pot roast with carrots and egg noodles. New traditions w/ my husband, daughter and I include nights of the week where one of us always chooses the menu, and one "free-for-all" night that I have off from the kitchen, and they can scrounge for leftovers. I also like using Sunday afternoon for making several days' worth of meals ahead to make work days easier.
My cooking triumphs
It was very intimidating to host my first Thanksgiving a la rock_lobster several years back, but it turned out successful and delicious, and now I'm always happy to pitch in at any holiday meal.
My cooking tragedies
I accidentally put sweetened condensed milk into a corn chowder instead of evaporated milk! /barf. Also, I was on vacation and had to make do with what the rented cottage had and prepared Paella in a big soup pot with ill-fitting lid. 2 hours later, and hungry folks nibbling hors d'oeuvres in anticipation of dinner, and the rice was half crunchy-disaster, half squishy pudding-consistency. Mistakenly bought puff pastry dough instead of phyllo dough for a slender, Nutella-filled dessert treat that ended up exploding into a dough-ey snake in my oven.

Vegetable Quiche Cups To-Go Haiku: "Fun and convenient. Just didn't taste like that much. Needed seasoning." Other than swapping egg substitute for 3 larger eggs, I followed the recipe as directed, and found myself adding considerable amounts of salt, pepper and hot sauce when it came time to eat one. I do love having frozen mini crustless quiche bites for a quick breakfast, but I also want them to be tasty, so if I made this recipe again, I'd tweak around w/ more spices, as well as maybe sauteeing the onion and bell pepper 1st rather than mixing them raw and crunchy into the eggs.

Scrumptious Salmon Cakes
Scrumptious Salmon Cakes Haiku: "Close as I could get, had to make some little swaps, still they were quite good." Subbed a couple tsp. of dry parsley for fresh, and lite Duke's mayonnaise for Miracle Whip, otherwise, did every other ingredient as directed. I found that there were too many unnecessary ingredients competing w/ one another in the salmon patties, and that sometimes less is more. That's not to say that these didn't taste good, but I actually was less thrilled w/ the texture - very poofy and squishy on the inside, but well-browned and crispy on the exterior, making me think that I should've made 10 or even 12 smaller patties instead of 8 large. I think if I made this recipe again, I'd do just that, along w/ using plain panko instead of Italian-seasoned, and drop the dijon mustard and/or parmesan - Old Bay is flavorful enough. Thanks Judiebug - salmon patties w/ mac n'cheese on the side is one of our favorite Spring comfort meals!

Melanie's Chili
Melanie's Chili Haiku: "Good, basic chili. Used kidney beans, not pinto. Maybe needs some heat." A nice, well-rounded chili that perhaps would've been better w/ a small can of tomato sauce instead of 15 oz., along w/ more chili powder and some salt and pepper. Something came up, and after mine had simmered for 30 min., had to put it away until the next day, so my chili had an extra day for its flavors to marry, so by the time we sat down to eat it, it was the perfectly thick consistency that I like, and even though the hubbs and I had to add hot sauce, we still thought on its own, Melanie's Chili was pretty darn good.
