Me at the Pool!
About this Cook
I'm a Mother/Baby RN working in Tacoma, Wa. on the night shift. I have been married 6 years and we have 5 children together, the youngest 3 still live at home and they are 9, 5, and 1 1/2. My husband gets to be the stay at home dad and I get to do all the cooking! I do love to cook on my off days and working 12 hr. shifts means my kids and hubby are "on their own" for 3 days a week!
My favorite things to cook
I lOVE pasta, pizza, steaks, sea food, and i lOVE to try new recipes out! I love my slow cooker for making chili and stew/roasts, even for making barbeque ribs or roasts. I really LOVE chowder be it corn or clam and home made chowder is the best! Pizza's are really fun to make and you can be really creative! Of course you got to have deserts and i LOVE anything Cheesecake!
My favorite family cooking traditions
I'm got to make my Crock Pot Stuffing for Thanksgiving, its better then ANY boxed stuffing or any other stuffing i've ever had!
My cooking triumphs
I LOVE my Savory Fetta Meat pies, they are to DIE for! My kids are always asking for those!
My cooking tragedies
Trying to make spinich artichoke dip, it came out SOOOOOO super greasy, it was virtually unedible.

Key Lime Pie VII
IT is good albeit VERY VERY sweet...DEFFINATLY chill overnight as it needs time to set or it will come out more like pudding in a pie shell...It tasted good although i think i was looking more for a keylime mirange type of pie

Lemon Zucchini Bread
This is THE BEST zucchini i've ever had! I did some modifications and doubled the recipe for two loaves as one just isn't enought! I put in 2 tablespoons of lemon juice and i also zested a whole lemon (not sure how much zest that equates) and i also used the glaze that another reviewer used and it was absolutly HEAVEN!!!! I also didn't sift the flour, used the whole wheat flour instead, baked both loaves together for about 20 minutes longer then the stated time and they came out soooo delicious and moist and wonderfully heavy like a pound cake, it was just PERFECT!! I can't wait to make these again!

Cinnamon Cream Syrup
I had already made the "Oatmeal and Applesauce Pancakes" when i realized we were out of syrup and didn't have any "mapple" extract to make mapple syrup but found this recipe and it was fantastic! Deffinatly a keeper!
