Shrimp and Feta Cheese Pasta
Wow! This is good stuff! Here's what I did: -up the wine to 1/2 cup. -chopped up 5 roma tomatoes total. You could EASILY add more. -added a couple dashes of crushed red pepper. -after cooking the prawns and removing them I didn't bother adding more olive oil to finishe the sauce. With the extra wine added it's really not needed. -I used 4oz of feta instead of 6. It's PLENTY, and I would assume just as tasty.

Chicken Enchiladas I
Simply excellent! Didn't add the water either, just the right thickness without it. I also shredded the chicken with a fork after cooking instead of cubing it-makes it easier to roll the tortillas as well. Delish!
