Margaret's Southern Chocolate Pie

Reviewed: May 11, 2008
very good with a nice consistency. Followed the recipe as written. I agree with some reviewers who suggested that filling might be a little skimpy so next time I will either prepare double or 1 1/2 times recipe.

Scalloped Cheese Potatoes

These potatoes are easy and delicious. I used a combination of mushroom and chicken soups, omitted the butter and baked first 30 min. covered with foil. Will definitely make again!

Roast Sticky Chicken-Rotisserie Style

Chicken was juicy and tasty, but didnt live up to its wonderful reviews. Cooked one marinated chicken about 4 hours. When I want rotisserie chicken I will get one from the store. Probably wont make this again.

Cheese Fondue

Reviewed: Jan. 24, 2008
It has been about 10 years since I made fondue and this was wonderful! I did rub the pot with clove of garlic and mixed flour and grated cheese together. Reisling wine worked very well. Used 1/2 loaf of Vienna bread, smoked sausage pieces, shrimp and broccoli for dipping. No problems with clumping. Will definitely make this again.

Hash Brown Quiche

Reviewed: Jan. 13, 2008
This was very good using a few revisions suggested by previous reviewers. I used: 3 cups of thawed hashbrowns and browned them slightly before pressing into pieplate; melted about 2 T. margarine and greased pie plate with a little and then drizzled rest on top of potatoes; took about 20 min.for potatoes to brown in oven and then added the ham/cheese/green onion; used 4 eggs and 1/2 cup milk; baked about 20-25 min and sprinkle little more cheese on top last 5 min. Remember to let quiche sit about 5 min. before slicing. Husband and I both liked this and will make it again. Thanks.

Disappointing. For me, this just didnt live up to all the rave reviews - not something I would want to make again.

Slow-Cooker Chicken Tortilla Soup

Reviewed: Oct. 28, 2007
This is delicious! Following some suggestions from other reviewers, I made a few adjustments: used all chicken broth instead of water, and added some black beans. I used tomato puree instead of whole tomatoes because I dont care for chunks of tomatoes and used 10 oz. can of Mexicorn instead of frozen corn. I also put the chicken in crockpot cut into strips but not cooked. 6 hours on low was perfect and garnished with sour cream, cheese and purchased tortilla strips. I will definitely make this again. Thanks.

Cake Mix Cookies VII

Reviewed: Jun. 27, 2007
This cookie is soft, chewy and delicious! I followed suggestion from others and used 1 stick of soft butter and 1 scant T. oil instead of 1/2 cup oil. Used a milk chocolate cake mix and added 3/4 cup Health milk chocolate toffee bits. Baked for 9 min. Easy and wonderful - will definitely make this again.

Delicious! I used ham instead of bacon as I had leftover Honeybaked ham and omitted green pepper. Light and fluffy. Thanks for a great recipe.

Dilled Green Beans

I followed the recipe exactly as written and these beans are delicious! Of course I had to try them after one day but they are definitely best after marinating a week. I was fortunate to find the little tender french green beans.

Chewy Chocolate Chip Oatmeal Cookies

Reviewed: Nov. 8, 2006
very disappointing. These were NOT chewy, didnt have enough chocolate chips. In the past I have used Betty Crocker oatmeal chocolate chip cookie mix with good results. This recipe definitely was not worth the time or effort. I am going back to the mix!

Lemon Mushroom Herb Chicken

Reviewed: Mar. 30, 2006
This was delicious. I prepared it in a Nesco roaster and made a few changes: I used 8 small bone-in chicken pieces; 1/4 cup butter was plenty; 1/2 can of the condensed chicken broth. This was for a family get together and both my sister and daughter wanted the recipe. It also 'held' very well as I turned it down to low heat when finished. Campbell's makes chicken broth which is in the soup aisle - do not dilute it and it is very rich and perfect for this recipe. Thanks.

Slow Cooker Stuffing

Reviewed: Nov. 25, 2005
My husband likes his stuffing very moist and he said this is the best I have ever made - we have been married over 40 years!! The only spices I used were sage and poultry seasoning and no mushrooms. I started with 1 1/2 cans of chicken broth (14 oz. size) and added the rest gradually when I stirred the stuffing every hour or so. Started it on high for 45 min. and then 4 hours was perfect. It was a big hit, and I will definitely use it again. I also liked the convenience of preparation in the crockpot. Thanks.

Slow Cooker Barbecue Ribs

Reviewed: Apr. 13, 2004
Tender, delicious, and pretty easy. I cooked these in a 6qt Nesco roaster on the slow cook setting. I followed suggestion of using half ketchup and half BBQ sauce (Kraft original). I also used 12oz. bottle of chili sauce because I like it. They cooked about 8 hours - nice and tender.

Easy Sausage Strata

Reviewed: Apr. 13, 2004
I served this strata for our family Easter brunch, and it was a big hit! My daughter-in-law asked for the recipe. I scaled it to serve 12 and baked it for about 60 min. in a 13x9 pan. I did use part half and half and part milk as someone suggested. It is important to let it sit for about 10-15 min. before serving. The few leftovers reheated nicely in microwave the next day. Thanks for a great recipe.
